Hitachino Nests most popular beer is their White Ale, so it was a natural starting point for this collaboration. We opted to add hops (as we are known to do) and made a white IPA based on the flavor profile of the White Beer. Kiuchi suggested incorporating the use of yuzu (a small Asian citrus fruit) into the brew, and we found the bright lime-like tartness perfectly accentuated the flavors of hops and the spicy notes of the classic witbier yeast.

Light-to-no haze in this slightly copper-tinged, golden beer. White head atop is small but shows some slight retention.
Smells very peppery. White pepper, fresh herbal notes, lush grass and tons of floral characteristics. Almost fresh cilantro-like, though without the vegetal aspect associated with that. Pretty incredible, anyway, that it’s that peppery. Is this all phenol? Seems like they must have added coriander here. Whatever it is, it’s fresh and lovely-smelling. As far as IPA character, it’s pretty light on the hops, adding only a touch of lemon on top of the light honey and cracker-like malts. Very dainty/delicate and with no alcohol, resin, flaw or any crude esters/phenols (ie. doesn’t smell like some cheap witbier).
Light honey from the malt provides a delicate backbone and attenuation is high, with tons of pepper, herb, grass, floral and spicy notes. Light but ample carbonation, with some wateriness contributing drinkability. Low but appropriate bitterness easily balances the dry character of the beer and pepper and spice linger long on the finish. Very nice stuff.

Light coriander and yuzu citrus like you are wondering what the hell that fruit smell is in the Japanese market. Hazy orange pour with foamy head. Bitter finish. Good balance. Bottle.

Bottle from 2017 Beer Camp case. Pale golden with small, tight white head, fine streams of carbonation. Light citrusy aroma, lemons. Taste strays into citrus flavors too, but has a nice hops bite on the finish. Lightweight in feel, seems dry, bitterness lingers for a while.

Draft at Sierra Nevada, Chico. Pours out a pale yellow color with a light haze, small white cap. The aroma is lightly citrus with the witbier yeast. As far as flavor goes, the fruity bits come out at first, but it seems subdued compared to the yeast. I remember why I don’t really care for this style (white IPA)… the witbier yeast doesn’t work for me in an IPA.

Clear light gold with a minimal white head. Light peppery, spicy aroma with a touch of citrus. The flavor follows the aroma pretty much with a dry finish.

Sampled from a 12 oz brown bottle this beer poured a slightly hazy bright yellow-gold color with a large foamy yellow-white head that lingered and left a bit of lacing. The aroma was sweet, tart, citric and yeasty. The flavor was dryish, perfumey, grainy and yeasty. Long dry and perfumey finish. Medium body. Meh.

12oz bottle. Pretty cool offering. Unique lemon-lime tones. The yuzu is hard for me to fully grasp, but adds some exotic tropical pungent tones. Quite a fun beer, well made/executed. A great White IPA.
