Hitachino Nests most popular beer is their White Ale, so it was a natural starting point for this collaboration. We opted to add hops (as we are known to do) and made a white IPA based on the flavor profile of the White Beer. Kiuchi suggested incorporating the use of yuzu (a small Asian citrus fruit) into the brew, and we found the bright lime-like tartness perfectly accentuated the flavors of hops and the spicy notes of the classic witbier yeast.

12oz bottle pours out golden straw topped with a white head. Nose is belg spice pepper fruit notes maybe the yuzu. Taste is more of the nice spice belg yeast notes light fruit and a light bitterness on the end.

Sampled from the tap at Republic 7C. Pours a clear yellow with a white head that dissipates slowly to the edges and laces. Aroma has notes of flora, coriander and yuzu with some sweet grains underlying. Flavor has lots of coriander and flora with yuzu and grains supporting.

Kind of an odd duck. Aroma is lots of spice especially cloves yeast and some sweet malt. Flavor has some hops but the yeast and malt dominate. Heavy bitter finish tapers off.

Enjoyable White IPA we have here. Falls closer to a wit than an IPA for certain, but the subtle wheat-and-hay sweetness pairs well with some classic Sierra Nevada pine on the finish. Clove notes add heft, while the citrus from the yuzu adds a nice juicy undertone without becoming overbearing. Ends with a hoppy flourish, leading to a yeasty, floral fade. Not all that pretty of a pint, but the nose hits on both the banana-clove from a witbier and straight Pacific Northwest pineyness you expect from SN. Lovely texture, both soft yet perky. My favorite from the mix pack thus far.

Slightly hazy golden with a tall white head. Citrus fruit, light spice, lightly herbal, tropical juice. Medium bodied. Finish is fruity and bitter. Bright and refreshing.

Bottle from the mix pack from Total Wine in Folsom, CA. Pours light gold with a creamy white head. Aroma suggests kaffir lime leaves. Med body or nearly. Flavor is very lime leaf. Maybe some yeast and coriander. Relatively dry. Not exactly bitter, but the lime or whatever is supply the antidote to the malt. Rather refreshing.

12 ounce bottle into tulip glass, bottled on 4/26/2017. Pours slightly hazy pale golden/yellow color with a 1-2 finger fairly dense and fluffy white head with good retention, that reduces to a nice cap that lingers. Nice dense foamy lacing clings around the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of tangerine, grapefruit, lemon, lime, coriander, orange peel, citrus rind, peppercorn, clove, peach, melon, pine, light banana/bubblegum, wheat, cracker, herbal, floral, grass, and yeast earthiness. Nice and pleasant aromas with good balance and complexity of fruity/spicy yeast, citrus/pine hops, yuzu, spices, and light-moderate pale malt notes; with solid strength. Taste of big tangerine, grapefruit, lemon, lime, coriander, orange peel, citrus rind, peppercorn, clove, peach, melon, pine, light banana/bubblegum, wheat, cracker, herbal, floral, grass, and yeast earthiness. Moderate pine/rind/grassy bitterness and peppery yeast spiciness on the finish. Lingering notes of tangerine, grapefruit, lemon, lime, coriander, orange rind, peppercorn, clove, peach, melon, pine, wheat, cracker, herbal, floral, grass, and yeast earthiness. Very nice complexity, robustness, and balance of fruity/spicy yeast, citrus/pine hops, yuzu, spices, and light-moderate pale malt favors; with a nice malt/bitter/spiciness balance. Slight lingering hop/fruit astringency through the glass, but not overwhelming. Moderate dryness from bitter/spiciness and carbonation, quickly increasing through the glass. Medium-high carbonation and light-medium body; with a very smooth, moderate crisp, bready/grainy/sticky, and fairly resinous/rindy balanced mouthfeel that is nice. Zero warming alcohol for 7%. Overall this is a very good white IPA style. All around good complexity, robustness, and balance of fruity/spicy yeast, citrus/pine hops, yuzu, spices, and light-moderate pale malt favors; very smooth, crisp, and easy to drink; despite the increasingly drying bitter/spicy finish. Really nice balance between Witbier, IPA, and fruit flavors. Wish it had a bit more body to balanced the bitterness, but this was still very enjoyable.

Pour looks like an AAL, decent amount of foam. I get a spicy nose up front; coriander and some cloves. Beyond that, it smells fruity in a perfume kind of way.
Kinda spicy taste but more of the fruit nuance that has some light bitterness and almost suggests that some tartness will follow. It doesn’t quite get there but the weird tastes gets to be an enjoyable experience for me.
