Het bier is in beperkte oplage gebrouwen van 400 liter en alleen verkrijgbaar op het Zythos-festival. Amaris is een donkere quadrupel met 10% alcohol en is gelagerd op Jack Daniels-vaten. De naam is een samentrekking van Prearis Quadrupel, de quadrupel van de brouwerij van Andy Dewilde, en St. Amatus, de quadrupel van Struise Brouwers.

Bottle at TripelB, Worcester, Wednesday 22nd October 2025 in the company of Mum, Keith. Pours dark, murky brown, nice off white head. Nice aroma, wet boozy wood, liquorice, (mum gets Marmite) there's a beefy touch, brandy comes through but doesn't intrude, taste is similar, it's a nice blend.

750 ml bottle. 2014 vintage. Thanks on the share Adamchandler. Aroma is prune, raisin, funky yeast. It held up remarkably well for the age. Plenty of dark fruit, mild oak, a touch of funk. Good thing Adam opened this because that funk note probably should not be here. Still a nice sipper. Open it if you still got it!

Bottle split at RB Best Encomium share, Santa Rosa, 30/01/16 - Many Thanks ! Murky chestnut brown with a decent beige head. Nose is tangy dark fruits, wooded tones, light musty notes, fruit cake, booze tunes. Taste comprises Xmas cake, brown sugar, light bourbon ripple, oak, tangy stewed fruits, dates, raisins. Full body, fine carbonation, semi drying close with a rising lick of alcohol. Ok but lacking complexity and finesse ABV considered.

Bottle shared with and courtesy of a limping but not too distressed marmot in Deanso’s garage. Dark brown with a small tan head. Aroma of bourbon, vanilla, oak, caramel, yeast, overripe dark fruits and malt. Flavour is heavy sweet. Full bodied with alcohol warmth in the finish and soft carbonation.

At Hopishop 2016. Aroma of vanilla booze, raisin and malt. Taste has soft vanilla, raisin, ripe fruit, booze and caramelised malt. Simple, but nice.

Bourbon barrel aged blend of two great Western Flemish quads, bottle shared at Belgium Chimipalooza, apparently one of only 277 bottles ever made - exclusively for a ZBF edition... Loosely structured but still moussy, off-white head, cloudy burgundy brown colour. Aroma of dried banana, toffee, old sherry, balsamic vinegar, hazelnuts, dried mushroom somewhere, bourbon, wet oak, soggy brown bread, peach, orange peel. Soft sweet onset, banana, medlar and fig hints with a sourish blackberry-like undercurrent, soft fluffy mouthfeel, caramelly and bready malt sweetness with yeasty spicy notes, warming bourbon-like alcohol in the finish, some drying wood, but residual brown sugar sweetness dominates - without ever becoming cloying, however. World class quadrupel in every sense, but not quite at the level of e.g. Pannepot Grand Reserva.
