Double IPA aged in French oak Chardonnay barrels with Brett. Deep within the tortured aberrations of a monk’s mind there lay a concept of a Holy Grail of beer -- a beer oft imagined but never tasted, strived for but never achieved. It’s Belgian heritage manifested in its yeasty complexity, softened and rounded in its cooperage Français and made to sparkle like the stars first seen by his distant predecessor Dom Pérignon.
Bitter Monk Belgian Double IPA is such a beer. Redolent of citrusy hop bittering and massive malt infusion, this is a beer to ponder, to sip, and, even for a monk, to dream. Why then is the monk so bitter? What provokes that sly smile? What is he wearing under that flowing robe? A triple-fermented beer gives him three times the mystery. Remember, anything worth doing is worth over doing. Nothing exceeds like excess. Even for the cloistered.
And what rough monk, his hour come round at last, slinks slowly toward Brussels to be reborn.

750 ml bottle into tulip glass; Batch #4, bottled in 12/2015. Pours fairly clear golden yellow color with a 2 finger dense and rocky white head with great retention, that reduces to a nice cap that lingers. Nice spotty soapy lacing clings around the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of huge lightly tart/sour lemon, lime, pineapple, peach, apricot, passion fruit, papaya, mango, guava, grapefruit, orange peel, peppercorn, white wine, oak, hay, straw, musty funk, leather, cracker, bread, herbal, floral, grass, and yeast earthiness. Incredible aromas with fantastic complexity and balance of fruity/funky/spicy yeast, citrus/tropical hops, wine barrel, and moderate pale male notes; with great strength. Taste of huge lightly tart/sour lemon, lime, pineapple, peach, apricot, passion fruit, papaya, mango, guava, grapefruit, orange peel, peppercorn, white wine, oak, hay, straw, musty funk, leather, cracker, bread, herbal, floral, grass, and yeast earthiness, Large amount of peppery yeast spiciness and citrus rind bitterness on the finish; with lingering notes of lemon, lime, pineapple, peach, apricot, passion fruit, grapefruit, citrus rind, peppercorn, white wine, oak, leather, musty funk, and floral/grassy/yeast earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/tropical hops, wine barrel, and moderate pale male flavors; with a great malt/bitter/spiciness balance, and zero astringent flavors lingering after the finish. Very drying from bitter/spiciness as well. Medium-high carbonation and medium body; with a very smooth, crisp, sticky/resinous, lightly grainy/creamy, and acidic/tannic balanced mouthfeel that is awesome. Alcohol is very well hidden with only a light warmth lingering after the finish. Overall this is an insane Belgian IPA! All around incredible complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/tropical hops, wine barrel, and moderate pale male flavors; very smooth, crisp, and easy to drink for the big ABV. A really amazing offering all around.

Golden-amber, hazy body, with a big, creamy, lacing, white head.
Amazing aroma of Brett, barrel, white wine, citrus candy, berries,
Tastes of sweet ripe fruits, lemongrass, barrel, white wine, barnyard, grass.
Medium, oily mouthfeel, with a soft carbonation.
Finishes dry, medium sour, wooden, vinous, subtly sweet malty.
Tasty. The nose is really amazing, just how I like a Brett beer. Tasty doesn’t keep up in my opinion, while still enjoyable. Overall I don’t get the DIPA much, this is pretty much a sour ale, but a very enjoyable one.

0,75l bottle at home shared by 4, from trade with fabiand, big thanks for that one. Batch No 4, 12/2015. dark yellow lightly hazy color, small white head. smells lightly funky, some wood, marzipan, nutty, light green apples, peach. very nice smell. full body, slick mouthfeel, soft carbonation. tastes of spices, light wood, peppery, peach, acidic, herbal. finishes rather dry, lightly alcoholic and rather spicy with some herbal and peppery notes. good stuff, liked the smell quite a bit more, would love some more sourness on the taste. overall still very nice beer.

Refrigerated 75 cl bottle, bottled on December 2015, poured ibto a tulip. Hazy golden with medium/big white head. Aroma is light Brett, medium body, medium carbonation, and thick small-bubble lacing. Taste is tart Brett, some funk, some herbal hops, some oak, some white wine, and slightly bitter dry finish. Not a favorite.

Bottle shared at Klooster. Hazy orange with a white head. The bottle wasn’t super fresh so the hop character had fallen off somewhat, but the Brett was certainly highlighted, nice and funky with some light oxidised sherry notes present, caramel malt and some fruity hops lingering. Flavour is moderate sweet and bitter. Medium bodied with soft carbonation.

Bottle share, thanks Steve. Golden yellow color with an ample off-white head. Strong aroma of pine, citrus, brett, and oak. Bright and funky. Tastes a little heavier in the bitters before getting lightly sweet and some more funk. Gets a little grassy and dry. Good stuff.

750ml bottle thanks to Steve. pours out a hazy yellow topped with a white head. Nose is lots of Alaskan funk some citrus hops and lots spice. Taste is more of the heavy funk some wood and a nice citrus hop.

Wonderful stuff. Loads of citrus and a nice hint of florals. Good malt backbone to carry the hops. Hazy orange pour with great head and lacing. If this is how it tastes in bottle I’d love to have it fresh. Bitter finish with some astringent peel and citrus tang. Bottle.
