Double IPA aged in French oak Chardonnay barrels with Brett. Deep within the tortured aberrations of a monk’s mind there lay a concept of a Holy Grail of beer -- a beer oft imagined but never tasted, strived for but never achieved. It’s Belgian heritage manifested in its yeasty complexity, softened and rounded in its cooperage Français and made to sparkle like the stars first seen by his distant predecessor Dom Pérignon.
Bitter Monk Belgian Double IPA is such a beer. Redolent of citrusy hop bittering and massive malt infusion, this is a beer to ponder, to sip, and, even for a monk, to dream. Why then is the monk so bitter? What provokes that sly smile? What is he wearing under that flowing robe? A triple-fermented beer gives him three times the mystery. Remember, anything worth doing is worth over doing. Nothing exceeds like excess. Even for the cloistered.
And what rough monk, his hour come round at last, slinks slowly toward Brussels to be reborn.

Smak och doft av humle, citrus, tropisk frukt, grapefrukt, brett, färskt trä, mango, sött päron. Fruktig, torr med sträv beska med smak av grapefrukt, tall med maskrostendenser.

The appearance has a hazy yellow somewhat dark orange colored body with a half finger white foamy head that dies at a moderate pace, light somewhat foamy lacing graces the sides of the glass.
The smell has some orange up front, somewhat grassy peppery lemon/citrus thing goin’ on in the background, light yeastiness comes forth after some warming.
The taste is bittersweet through the previously noted flavors and an added hop note with some grapefruit coming in and punching my tastebuds, citrusy aftertaste, super dry finish.
On the palate, she sits about a medium for the most part - hinging on a slight possibility to light, sessionable - maybe. Carbonation seems pretty good for the Belgian IPA style and for me as there’s an adequate harshness and yet its not overbearing whatsoever.
Overall, this one is very well done and I would love to have it again with food or just sittin’ on my back porch as a summer sipper.

Botella de 75 cl en el lúpulo 08-02-2014 en el momento. Color amarillo pálido con espuma blanca persistente. Cuerpo medio - alto con 9 vol que le dan una buena sensación alcohólica y carácter. 100 Ibus maravillosos. Aromas afrutados cítricos y brettas, aumentando sensaciones maltosas a medida que calienta . Sabores bastante afrutados al principio y cítricos, naranja amarga, pomelo... con ligera presencia de acidez y final amargo interesante y persistente en boca durante un buen tiempo. Aumento de matices maltosos al calentar haciéndola un poco mas densa y espesa. Una gran e interesante cerveza doble ipa con el amargor y las brrettas perfectamente combinadas y con ligeros atisbos dulces, en el medio, de Bélgica. Muy buena muy buena, una gran combinación doble ipa y brettanomyces.

Clear golden and lightly coppered body with a ridiculously large, four centimetre tall tan head that leaves a nice lace. Aroma of super pungent brett, sour grapes, oak, a strong yeast note, a little resin and a lot of whole hop pineyness. Medium-bodied; Strong assertive flavours with brett, yeast and sour notes tucked with wine and oak right afterwards and a pungent hop biterness at the end. The aftertaste shows nothing but complexity from a bit of grape sugars at first to a super dry oak and peppery yeast flavour and all finishing with deep resinous and grassy hops throughout. Overall, a very nice complex beer with tons of different flavours every few seconds, all lasting a long time and merging profiles. Definitely worth getting and packing in your suitcase - this one is a great beer. I sampled this 75 cL bottle purchased from Silver Gulch (ANC Airport) in Anchorage, Alaska on 04-October-2013 for US$11.99 sampled at home in Washington before Christmas on 22-December-2013.

Bottle. Pours a clear pale yellow with a white head that lasts throughout the beer and laces nicely. Aroma has a good amount of light fruits, light funk and some underlying wine barrel. Flavor sees the hops come through a bit more with a note of citrus with the same brett and light fruit note and a dry wine finish.

Bottle shared by my cousin Dave. Brett yeast, fruity pineapple, tart lactic lemon, wood, and grapefruit aroma. Hazy golden with a large white head. Sweet-tart lemon, brett, spicy oak, and sweet fruity grapefruit flavor, smoothed with a hint of vanilla in the finish. Light creamy body, lively carbonation, dry finish. Outstanding!

Bottled at SBWF. Cloudy golden, coarse head. Fruity nose with bitter almonds and hay. dry with medium-full body and soft mouthfeel. Gentle and seemless with a rich array of flavours, ranging from from citrus over oak to cobwebs, Mid bitter finish. Another lovely beer from an awesome brewer!

Sample at SBWF 2013. Hazy dark golden with a white head. Aroma and taste of hops, grape, apricot, yeast, some bread and brett. Refreshing and easy to drink. The body was medium as was the carbonation.
