This sparkling medium dry cider is 100% Dabinett apples co-fermented with Pinot Noir grape skins. Deep pink with aromas of red berries and honey. The interplay between grape and apple tannins create intrigue and complexity, with huge length and a soft dry finish. Fermented in steel with wild and cultured yeasts.

75cl bottle from Scrattings. Shared with Soph before racking off our first cider. Pours a vivid deep blood red. Aroma bears red grape schloer, blackcurrant. Gently effervescent carbonation, delicate but welcome pinot noir influence alongside some pithy apple core and deft dabinett nuances.. good fruity crèmant freshness about this with a lightly tart acidity. Interesting, definitely blurs the lines between cider and sparkling wine. Good stuff.

Bottle split at L6, thanks to Fergus, 28/11/18. Pale yellow with a pinkish glimmer and a solid off white cap for a cider. Nose is glazed apple, iced cidre exhaust, sweet orchard aromas, sugars. Taste comprises bitter sweet apple, icing powder, pink lady apple skins, light tannins. Medium bodied, fine carbonation, semi drying close. Decent.

Bottle shared at Columbus tasting 28/11/2018. A pale peach pink coloured pour with a hal oof white head. Aroma is semi sweet, rose petals, floral notes. Flavour is composed of light wood, floral apple, glazed apple, light wood, Palates i slight tart, moderate carboantion, crisp finish. Nice apple, Lingering woody

Bottle shared in London - cheers to Fergus. Pours clear, light pink with a small, foamy white head. Good fun, fairly dry, a little wood, apple skins. Medium bodied. Dry and musty finish, more apple skins, light citric tang, some alcohol warmth. Nice stuff.

Bottle at Cider Salon, 2018. Pale golden pink colour, no head and aroma of fruity apple, caramel. Taste is fruity apple, melon, slightly tart. Medium bodied, low carbonation, dry fruity apple finish. Quite drinkable.
