Our Sparkling Vintage Cider is made with a high proportion of dessert apples in the mix to give it that delicious ‘méthode traditionelle’ taste.

The apples are pressed, then fermented twice: first in the barrel for a year; then a second year’s fermentation in the bottle. The cider is then disgorged in the champagne style and aged further before release. It is the secondary fermentation that gives our cider its wonderful bubbly effervescence; a method invented in the West Country for fine cider making around 1600, well before it was used in France for Champagne.

750ml bottle. Pours pale green gold with high carbonation. Aroma is dry apple, with some porridge and pasta. Which I know sounds odd. Taste has dry apple throughout, with the porridge notes and apple skins on the finish.

75cl bottle from Scrattings. Pours pale gold with a light mist, small remaining white ring atop. Subdued sweet apple fruit on the nose, a touch rubbery. Fine, spritzy carbonation. Taste is sweet apple fruit, tart gooseberry with a measured acidity. Its unusually high strength brings a little weight and sharpness to the fruit, perhaps more in line with a dry champagne than cider. Still, pretty good.

750ml bottle at Cider Salon, 2018. Pale golden colour, short-lived fizzy white foam head and juicy apple aroma. Taste is fruity, apple, mellow sweetness, and citric, acidic. Light bodied, spritzy carbonation, dry finish. Quite drinkable.
