Wild + Foudres + Magic

Brewed back in 2017, Ghost Zapper started as a relatively simple recipe yet evolved through spending over 14 months in one of our Napa Valley red wine foudres. This oak ageing highlights how yeast and bacteria can build layers of complexity and depth, without the need for further blending. Ghost zapper is our second collaboration with Magic Rock Brewing following on from our bretted oat IPA - ‘Men Who Stare At Oats’. This time we bring the Wild and Magic together for something completely different!

This single foudre release has been inoculated with the lees of a beer called Squashed Grape. This beer has been fermented with the local microflora present on the grape skins; giving stunning aromas of ripe stone fruit and a bright vinous acidity balanced by oak and a little brown sugar richness from the malt.

330ml bottle, pours red with fast diminishing head. Aromas & tastes of cherry, grapes, lemon, berries & oak. Moderate body. Tart finish. Very enjoyable

Bottle. Amber pour. Aroma of vineus red fruit, oak, lacto sourness, tart and red grape. Taste of tart, red grape, vineus oak, lacto sourness, figs and a nice warming finish. Complex flavorful beer, nice.

Fles 33cl gedeeld bij 't Witte Konijn in Amersfoort. Flink rood fruit, zuur, wrang, wijnachtig. Goed. (3-2-2019).

Bottle shared at a tasting at Max's place. Cloudy red. Funk, oak, cherries, cobwebs, a bit of vinegar, sour, somewhat acidic, lemony. Very good.

330ml bottle. Tart, slightly fruity and vinous with some berries, grapes and blackcurrant notes. Okay, quite smooth and not very aggressively sour.

Pours very hazy coppery-chestnut colour, topped with tiny and nonlasting offwhite head. Gentler vinous soury nose with hints of caramel, slight wood and some fruity notes. Milder sourness, quite citric with slight vanilla-woody feel. Medium body, quite sparkly. Very fresh. Very lovely.

Bottle from Beer 52. Appearance - autumnal to toffee brown with absolutely no head. Nose - malt vinegar, brown sauce and wood. Taste - more wood and malt vinegar. Palate - close to medium bodied with a tangy sour middle. Long sour finish. Overall - great example of how to make a Flemish Brown.

Bottle shared at CBC - London. Cheers to Fergus! Pours clear amber with a creamy white head. Well and sour, has some punchy acetic bite, berries, salt, sweat. Medium bodied with fine carbonation. Very tart in the finish, more berries and salty sweat. Not bad overall.
