Wild + Foudres + Magic
Brewed back in 2017, Ghost Zapper started as a relatively simple recipe yet evolved through spending over 14 months in one of our Napa Valley red wine foudres. This oak ageing highlights how yeast and bacteria can build layers of complexity and depth, without the need for further blending. Ghost zapper is our second collaboration with Magic Rock Brewing following on from our bretted oat IPA - ‘Men Who Stare At Oats’. This time we bring the Wild and Magic together for something completely different!
This single foudre release has been inoculated with the lees of a beer called Squashed Grape. This beer has been fermented with the local microflora present on the grape skins; giving stunning aromas of ripe stone fruit and a bright vinous acidity balanced by oak and a little brown sugar richness from the malt.

330ml bottle. Hazy red-brown with big fizzy beige head quickly disappearing. Aroma is vinous, grapes, red wine, oak, funk. Taste is quite vinous, red wine and oak character, sour, tart and acidic, red berries. Medium body and carbonation.

At a tasting, almost no head, light cloudy oxidized red color, aroma of acetone, minerals, berries and a hint of vinegar, fruity berry, mineral flavor, mellow medium fruit vinegar sourness, very nicely balanced. Really good and enjoyable.

Bottle shared at Craft Beer Co Islington. 12/09/2018. A deep amber coloured pour with a halo of beuge head. Aroma is woody amber malt, toast, grapey fruit, sweet funk. Flavour is composed of spicy alcohol, green apple, tangy, vinegar, . Palate is tangy, green apple, vanilla. Palate si spicy vanilla, vinegar, highish carboantion. Nice.

Bottle split at CBC Islington, thanks to Fergus, 12/09/18. Lightly hazed golden copper with a decent off white head. Nose is pissy red grapes, oak, funk, light brett, pissy. Taste comprises barnyard esters, funk, damp oak, red berry must, berry pips, light fruit balsams. Medium bodied , fine carbonation, drying close. Decent sour.

Craft Islington bottleshare. Light haze on this gold beer. small pale cream colour head. Palate Palateht and fairly dry, reasonable fine carbonation. Thin malts. A mildly tangy ripe citric vibe. Gueuzey dried fruits. Light dry spicy finish. Not bad.

330ml bottle from Wild Beer Bristol. Pours a deep reddish brown, thin off-white topping. Aroma brings hedgerow berry fruit, red wine, sour balsamic. Taste elaborates with a nice depth of flavours and crisp sour edge, good red wine notes, decent vinous acidity though I personally would've preferred more. Comes together nicely.

Clear, red/brown beer, the head disappeared pretty much instantly. Smell is fruity and wine-y. Taste is tangy fruit, hop, a little lively in the mouth and you definitely get the red-wine aging off it. Just enough dry bitterness to stop it being sickly. Decent.

1On tap Thomas Tallis Canterbury. Hazy dark russet colour lasting beige head. A tractive sour fruit aroma. OK bit over carbonated. I rather liked it. Good funk aroma. Good sourness.

Keg at Cotteridge Wines birthday; clear copper red pour with a bubbly light beige head, aroma has mellow fruit vinegar, taste has cherry, caramel, sour fruity vinegar.
