A gently and naturally sparkling semi-dry, cloudy cyder made in the old ways. Beautiful bittersweet Dabinett (91%) and a little Ellis Bitter (9%) were fermented slow by wild yeasts, racked often and bottled early without filtering.

Bottle. Beer Zoo. Xmas gift off the missus. Soft on a medium gold. Fine ring of white head. Nose has over done baked apple. Apple stalk. Tea like tannins. Stinky, sweaty Dabinett. Some chamois. Taste has a light, baked apple sweetness. Firm, tannic bitterness. Light to medium body. Fine carbonation. Light, slightly tangy apple to finish.

75cl bottle from Favourite Beers, Cheltenham. Pours hazy deep gold. Aroma is soft musty farmhouse apple pulp. Taste is smooth farmhouse cider territory, some welcome tannic fuzz, good medium dabinett fruit character, light acidity. Good farmhouse cider.
