As winter’s wicked wilderness takes me from my usual hyperbolic verbosity, I take this moment to be mindfully grateful to have been given the chance to work with two of the top innovator men in the industry. Together we built this beer.
Mahalo plenty Jeppe and Charles, and Hipahipa to the rest of y’all, too. - Peace.
Cheers & Mahalo plenty!

Bottle split at DS, thanks to LKS, 29/09/22. Almost clear golden orange with an off white cap that veers to the edge. Nose is tarte citric rinds, funk, hedgerow, herb, grains. Taste comprises apricot, tangy fruits, dusty, grains, hay bale, strawberry pips, light funk, on the turn peach. Medium bodied, fine carbonation, semi drying close. Not bad.

Pretty clear, but slightly hazy, beautiful golden coloured body with a tint of bright orange, copper and bronze, somehow all shining through the nice golden glow, all with a thinnish and fast-dying off-white head that gets at most two centimetres tall. Aroma of super bretty, spontanteously fermented, oaky and dry saison notes with a lot of light malts, some hay and grass scents, but a complex, light fruity quality and a lot of funk components make this very nice and super complex in the nose - almost mouth-watering. Light to Medium-bodied; Assertive funky and peach notes dominate up front with a lot of foeder and oaky, cedary notes right away with an almost extreme dryness and some pine like components, that gives way a bit further down the line to some softer fruits and sweetness, but the dry notes dominate in a good way. Aftertaste is funky and all about the yeast here, with some bretty and dry components, this spontaneous fermentation and floral finish makes this very nice and robust with a light kick of apricots and stone fruits towards the end. Overall, a very nice and super complex, funky beer with more dryness and yeast flavours than anything else, but some light fruits, a touch of sweetness and some very noticeable cedar and foeder flavours make this robust throughout. Great to sample, especially after this time in the cellar and a quality, funky, complex beer that hits the notes nicely and is probably ripe for drinking right now, but what do I know - maybe some more time in the bottle will make this even better! I sampled this 75 cL bottle purchased from Knightly Spirits in Orlando (Orange Blossom Trail), Florida on 05-May-2018 for US$13,29, as Batch #481/579/581, bottled on 05-November-2015 and sampled at my house here in Washington on 14-October-2022.

Bottle shared in London - picked up in the US. Pours clear gold with a frothy, white head. Bit oxidised, old wood, aged berries, quite dry, lots of bitter grass. Medium bodied with fine carbonation. Bone dry finish, more pale wood, grass, oxidation, light tang, lemon peel. So so overall.
