A saison brewed with 20% unmalted Roter Tiroler spelt. We filterd this beer over a thick layer of straw (‘stro’ in Dutch, hence the name).

All the hops in this beer come from the Belgian hopfarm ‘t Hoppecruyt, that recently launched it’s ’24h hops’ project (first in Europe). The hops are harvested, dried and pelletised in 24 hours. We dryhopped with the Belgian variety ‘Groene bel’.

Sampled between ratebeer and brewver, so no real tasting notes. this one was very funky, dry, rather sharp. Good, but not great.

Yup, this is a saison. Dry, little bit of funkyness. The straw is noticable, but not sure it improves the flavour. More of a gimmick than anything else. Not that interesting, to be fair.

08/03/2019 - draught glass @GIST Hazy yellow with nice white head. Nose is malts, hay, bit fruits. Taste is malts, bit yeast, bit fruits. OK.

29 December 2019. At Dok Brewing Company. Shared with Anke! Pours hazy pale golden with a lasting, small, foamy, white head. Aroma of hay, straw (by association?), white pepper, ripe pear, banana, apple cake, apple sauce almost, white sugar, cookie dough, honey, grass, barley, vague wet hay. Taste is light fruity sweet, notes of apple & pear next to some banana, but not very estery in that way, supported by a soft doughy malty base; sourish hay & vague wheat initiate a medium grassy bitterness, note of grain, bitter hops & a spicy edge. Dry, grassy hoppy finish, lingering hay & yeast. Medium body, slick texture, fizzy carbonation. Interesting Saison, and an unusual Christmas beer as a whole of course.

Dok's Christmas beer, a collab with Alvinne in the form of a saison brewed with a large portion of unmalted spelt and filtered over a bed of straw; apparently the intention was to use the recently rediscovered but actually ancient Norwegian 'kveik' yeast strain, but this plan had to be abandoned due to the delivery of the yeast from Holland's Kromme Haring being delayed… Tasted from tap at Dok Brewing Company, Ghent. Snow white, creamy, cobweb-lacing, stable head over a hazy golden blonde beer with straw-ochre tinge. Aroma of dried apricots, straw but in a metaphorical way as it often occurs in Belgian saisons, green banana, camomile tea, cooked turnip, wet clay, old lemon zest, cold French fries, dry apple cake and a vague background whiff of DMS. Fruity, quite crisp onset, apple peel, green banana and dried apricot notes, slight bubblegum effect, very harsh and painfully numbing overcarbonation, very minerally; cereally, white-bread-slice maltiness with clear spelt graininess, some ongoing but clean fruitiness and light spicy aspects in the finish, which is dryish, floral and gently phenolic, with a refreshing effect. Too bad for the light DMS accent, otherwise a fine saison, albeit seriously overcarbonated even for a style which is necessarily effervescent. I wonder what a kveik-fermented version would have tasted like, though, so hopefully the package will reach Dok's state of the art brewing installation after all...

Clear pale blond beer, small creamy off-white head, stable, non adhesive. Aroma: very malty, some caramel, banana, fruity notes, some pears. MF: ok carbon, medium body. Taste: malty start, bit sweet, grains, ripe banana, lots of cow fodder, spicy touch. Aftertaste: soft bitterness, malty, bit of sour apples, grains, bit spicy, some cloves, banana peel.
