A word from the sommelier:
Pure Hyben Mjød 2016 is a medium sweet wine, though not as sweet as traditional danish mead. That makes it more versatile because of it's vinocity. It is fantastic for the strong cheeses, soft as well as hard cheeses, but also for chocolate deserts and as a mixer in cocktails.
The wine is clear and has a medium color intensity. An amber color. Hyben Mjød 2016 is pure with a medium aroma intensity – a unique development in aromas that are primary, secondary and tertiary. The aromas are dry apricot, wild raspberries, coffee, coconut, green figs, dry raisins, caramel and brown apples.
In spite of this being a sweet mead you have to catagorize it as semi sweet with a nice medium acidity that accompanies the sweetness to perfection. The tannin feel is low, the body medium and so is the flavor intensity. In connection with aromas there is wild raspberries, white pepper vanilla, burnt caramel, citrus, pickled dry figs, brown apples, figs, coffee and roasted walnuts.
The alcohol is medium and so is the aftertaste.

From 75 cl bottle. Clear golden colour with an amber tint. Sweet aroma with honey, spiced notes. Taste is sweet. Full bodied. Sweet finish with green apples. Nice.

Flavor is moderate to heavy sweet with a average duration, apple, honey, rosehip, raisin. Body is medium, texture is watery, carbonation is flat, finish feel is light alcoholic. [20160820]

Sampled from bottle @ Danish Ratebeer Gathering 2016, Ulfborg, Day 2. Clear orange golden color, no head. Aroma is nice honey, lightly sugar. Taste honey, slightly alcohol but not more than you would expect. Pretty nice mead, even though I can’t really describe it properly. Nice.
