Known for attacking drunk fishermen smugglers in the middle of the night, Osschaert—a shapeshifting monster from our region appearing mostly as a black dog with large claws and fiery eyes—would force them to their knees, his terrifying laugh ringing out across the waters. The beer is a collaboration with Totem, a smoked rye IPA brewed using 30% beechwood smoked malt, 30% rye malt and 40% pale ale malt. It's hopped with Columbus, Cascade and Chinook and dry-hopped with Columbus (pellets) and Simcoe and Cascade in the form of Cryo Hops®. Osschaert is a full-bodied beer with a grassy, subtly smoked flavour and resinous, tropical hop notes.

Sampled at BXL festival. Bit hazy golden with white head. Smoke, dank herbs, dry grassy, sweet malts, more smoke. Ash. Smoke. Medium sweet and bitter. Medium bodied with oily feel.

7 3 7 3 15Draft at BXL Beerfest ‘18, Brussels. Hazy golden orange with a white head. Aroma of citrus, malt and very light smoke. Flavour is above light sweet and bitter. Light medium bodied with light carbonation.

Smoked rye IPA created by Siphon in collaboration with Totem, tasted at Gents Bierfestival and named after a local variant on the ghostly black dog legend, with a funny story attached to it that apparently concerns the grandfather of Totem's brewer Klaas Dellaert. Snow white, medium thick, irregularly lacing, moussy head, hazy peach blonde with warm orange hue. Aroma of dried apricot, moist cigarette tobacco, dried apple peel, barbecue sausages, paprika, chicken spices, dried grapefruit peel. Fruity onset with notes of peach and banana, fizzy carbonation, slick and supple body; cereally and lightly caramelized malt body, sweetish but soon shifting to a bacon-ish smokiness, paired with a citrus peel-like hoppy bitter note, mellowly but very adequately bittering and in that sense making this qualify as an IPA as far as I'm concerned - but the smoky factor is clearly key here, and combined with the firm hoppiness creates a dry, savoury finish. Very elegant, but I didn't expect anything less from a collab between these two fine brewers.

Hazy golden colour with lasting head. Aroma and flavour have a nice mix of smoke and fruity hoppy IPA.

Thanks to sharing RB crew. Sampled draft @ Gents Bierfestival 2018. Orange, small white. Nose is mellow smoked glue, wood, touch plastic,.. Bit plastic with smoke but nice oily low fruity smoke, bit odd but overall good & tasty, one big note.

Draught Small yellow beer, over orange-ochre beer. Smokey-phenolic nose, overlying caramel malts. Less phenolics than in the nose, more cleaner malts. Finish has something not unlike lavender. Medium to better bodied, oily-viscous, well-carbonated. Nose is a tad too phenolic for my liking, if mellowing out in the taste, but then in the end it is a bit nondescript.

Slightly cloudy orange beer, creamy off-white head, slightly adhesive. Aroma: soft smoky touch, bit fruity, malty, floral notes, alcohol. MF: ok carbon, medium body. Taste: fruity start, pretty smoky, bit malty, pretty bitter, hoppy. Aftertaste: smoky, some yeast, floral, lavender, bit hoppy finish.
