In the world of German brewing, Kräusen refers to the intense proliferation of bubbles and foam formed during fermentation of a young or "green" beer. And Aufkräusen (literally to kräusen it up), refers to a historic brewing technique in which some green beer is added to a fully-matured lager. This is a very old and very typically German tradition, and today even English-speaking brewers refer to this technique as krausening. Krausening brings the vibrant freshness of young beer to the more refined, austere flavors of a fully-matured lager.
Aecht Schlenkerla Kräusen starts out as normal Helles Schlenkerla Lager and matures for months in the old rock cellars underneath the brewery. Just before filling it is blended using the before mentioned "Kräusen" technique with classic Märzen Rauchbier. The result is an unfiltered, bottom fermented and amber color Märzen Lager hybrid with a vibrant and slightly smoky flavor.

Bottle at home 27th December 2021. Pours a clear chestnut brown, with a massive annoying and growing head, I had to shot gun a load of foam to start it off. Aroma is light smoke and meat. Taste is caramel and light smoke, yeast and malts, east drinking, some meat, roasted notes and bacon, pretty good, but not as luxurious and intense as some of this brewers offerings

Bottle courtesy of Jonas, cheers my friend, this is a great beer! Had this Tuesday 6th July 2021 during Beer School (Beer with Nat). Golden in colour, actually quite a deep gold, edging towards, light amber with a large white head. Malty and smoke on the nose, but not hugely smokey, taste follows a similar pattern, i.e. everything in moderation, but there is a little aroma of charcoal and the anticipated sausageyness, but balanced with a decent malty base and steady but not too invasive sweetness. I have had quite a few from these guys, they rarely put a foot wrong but this hits the high notes by being just simply perfectly balanced. Ok I know that if I were to go through some of my other ratings for these guys, some of them might be higher, but this is a glorious beer.
