Our “San Diego Pale Ale.” Hop-driven from two key hops: citrus and pine from the wonderful and classic American Cascade, paired perfectly with the bright fruit and dankness of Australian Galaxy. With moderate bitterness and just enough malt backbone to elevate the hops, this Pale Ale is super-refreshing.
When it came to creating Ripper, we drew inspiration from the coastal surf cultures of SoCal and Oz. Sourcing classic Cascade from the Pacific Northwest and Australian Galaxy hops from…yes…Australia, we made a beer both lovers of frothy peaks and hoppy green buds will be stoked about. At the same time, we stayed true to our San Diego roots by pushing the hop boundaries of this style. While some might think it lingers on an edge far closer to an IPA, with all the dry-hop flavor and aroma, it’s actually right in line with the current-day interpretation of a West Coast pale. Ours just so happens to have an Aussie accent that’s cascading with a juicy amount of grapefruit and passion fruit hoppiness. So veg out or venture out. Either way, rip one open and taste this awesome golden nectar!

On tap at Recovery. Clear golden with small white head. Aroma is evergreen hops, medium body, medium carbonation, and good small-bubble lacing. Taste is evergreen hops and herbal hops.

Can. Color: Hay golden to amber, frothy off-white head. Aroma: Malt, hop, citrus and tropical fruit notes. Taste: Combination of moderate sweet malt and medium bitter citrus hop. Clearly present yet subtle citrus and tropical fruit notes. NEIPA-ish. Refreshing. Ok but not that special.

Pours somewhat hazy-ish, amber coloured, topped with a sizeable, solid and pretty lasting offwhite head. Nice, gentle fruity aroma, resiny with some pine notes. Mild sweetness upfront, fruity with biscuity back. Somewhat citrusy feel. Medium bitterness. Lighter body and sparkly texture. Not spectacular, but very nice one.

Can 330ml. Delicate sweet im aroma with citrus notes. Medium bitter, pretty nice but mostly herbal. Light but nothing special.

Brewed at Stone Berlin. Deep golden. Misty. Moderate white head. Average lasting. Nose: highly (almost pungently) tropical, somewhat danky. Light plus body. Taste: clean, dry enough, fruity, hoppy. Slow ending. Quite good revealing some palate questions.
