For the third installment of Prism, our dry-hopped saison series, we selected Cascade and Hallertau Blanc. Using the same simple grist, and expressive Belgian yeast strain, this itineration of Prism exudes huge grapefruit notes blended with massive aromas of white tea with a slight classic grassy finish that we all love in saison.

Appearance: glossy amber colored with a finger and a half's worth of white foamy head which slid off at a fair pace; mild lace
Aroma: grapefruit pith, light apricots, super light dose of white grapes, lemongrass, some floral hoppy tones
Flavor: blends all the prior noted aromas together in a semi-sweet to bitter to tart and grassy quality; finishes grassy with some herbal to floral and white grape-like tones
Texture: light to medium bodied, semi-sessionable; some smoothness along the tongue; but also some dryness
Overall: pretty nicely done saison I would return to and this might be good with some grilled seafood.

Pours a cloudy gold from can. Nice hops and some chewy. Bitterness. Pretty good

Can. Pours a clean and crisp gold with a decent but ephemeral head. Aromas of grass and herbal notes with a bit of pear-like sweetness. Flavor is decent, but I'm not sure how this really fits the bill as a saison... it's kind of a fruity presence (pears are still the best I can muster on that front) with a kind of grassy hops presence that then finishes back on the sweet and fruity side of things.

Can from Craft Beer Cellar - Clayton. Pours a glowing, neon straw color with a full 2 fingers of white foam. Lovely herbal aromas with light lemon, floral notes and straw aromas. Fluffy and smooth on the palate...easy drinking. Light mineral and herbal notes, with pithy citrus and faint apricot aromas. Original review text: Big saison yeast forward nose with lemon zest, hay, banana and overripe durian. Some light custard as it warms. Dry on the palate w/ hay.

Draught @ Ginger Man. Clear light golden with large foamy white head, faint grassy aroma, gentle carbonation, mildly bitter malty taste with faint grapefruit flavor, thin body, medium finish. Not so strong in flavors.

Clear golden body with white head. Spicy notes with hoppy aroma. Hop flavour with sweet grapefruit.

Pint can, Wine Warehouse. Pours slightly hazy golden with a white head. Aroma is floral hops, dried flowers, hay, light funk, light citrus, yeast, soap. Smells fresh. Flavor is light funk, earth, light citrus, dried flowers, dried grass, yeast. Good flavor - clean and fresh.

Pour is a cloudy gold with a large white head. Aroma is almost like a small amount if kiwi. Fruity but odd. Flavor is super dry with some decent but not overpowering tropical fruit hops. Not much of a saison yeast ester is felt this is more about the hops. Decent low alcohol hoppy saison.
