Continuing our exploration on the base of our bold American Imperial Stout infused with cold-brew coffee, we are proud to present Cacao PM Dawn. We took our base recipe then slightly dialed back the ratio of cold brew Italian Roast from Barrington Coffee to allow the heavy dose of cacao nibs to balance the beer and perfectly accentuate its flavor profile.
Cacao PM Dawn presents an opaque black color with khaki head and lacing. Warm aromas of freshly brewed dark coffee meld with the rich, savory accents of cacao on the nose. The flavor profile leads with toasted graham cracker, nutmeg, dried fruit, roasted mixed nuts, and chewy marshmallow. On the back end, the cacao nibs provide rounded depth of flavor, extending the palate with highlights of earthy, unsweetened dark chocolate. As with all of our PM Dawn variants, Cacao PM Dawn offers a medium to heavy body with a luscious mouthfeel and a light bitterness for a balanced and smooth finish.
STYLE: Imperial Stout Coffee
ABV: 9%
HOPS: Columbus
MALT: American 2 Row Barley, Caramunich, C-60, C-120, Dextrine, Black Patent, Roasted Barley, Special B, Chocolate Malt
ADDITIONAL INGREDIENTS: Cold Brew Coffee, Goodnow Farms Cacao

Canned 12-10-18. Earthy espresso, mild cocoa, and mild roast. Coffee linger long after the sip. Great smooth rich mouthfeel and full body. Guess I am glad I didn’t have this fresh. It seems to have mellowed quite a bit. Drink now if you got them.

Can shared at Lucky Bamboo share. Pours a deep brown to medium black with a small beige head that dissipates. Chocolate syrup aromas with cacao nib, vanilla and coffee notes as it warms. Fairly sweet on the palate, creamy mouthfeel. Sweet vanilla and milk chocolate. Gets a bit cloying towards the end. --- Beer merged from original tick of Cacao PM Dawn on 12 Jan 2019 at 23:20 - Score: 7

Undated can drunk 12/19/18.
Dark mahogany, clear, no head. Smells sweet and strong. Roasty and nutty. Sweet malt really pushin it here...not gettin a ton of cacao though its probably obscured by the dark malt. In the mouth. Chocolate syrup. Fudge. Milk. Light roast and prune nips at the sugar but stands no chance. Syrupy. No booze or flaw but way too god damned sweet.
