In spring 2011, Stone bought the farm, literally, taking over 19 acres of fertile Southern California soil where we now grow pristine fruits, vegetables, herbs and more for our Stone Brewing World Bistro & Gardens restaurants. A taste of our homespun farm-to-tableism is provided in this farmhouse ale. Lemon zest, grains of paradise, lemon thyme and lavender harvested in Southern California fields, including our own at Stone Farms, provide citrus and floral character along with a subtle, tantalizing spice. Thanks to the infusion of fresh West Coast ingredients, this isn’t your everyday saison. It’s our saison—100% Stone.

We made some minor changes to the beer this year, using German pilsner malt to increase the malt flavors. Additionally, we adjusted the proportions of lavender, lemon thyme, grains of paradise, lemon peel and habanero peppers to provide a great blend showcasing each ingredient within the overall balance of the beer.

Bottle. Fresh lemony, lavender, lightly funky yeast, and honey/fruity aroma. Slightly hazy golden yellow with a moderate white head. Strong pepper, lavender, thyme, and yeasty flavor. Body on the light side of medium, moderate carbonation. I really wish the fresh lemony scent had also come through in the flavor to balance out the heavy herbal notes.

Keg at the Brewdog AGM 2014. Yellow / straw coloured pour with a light white head that lasts well. Aroma is earthy farmyard saison yeast with some floral hop, touch of spices and citrus. Flavour is straw, drying spices, rosehips, earthy, saison yeast. Considerable spices, like ginger. Some yeast phenols. Palate is drying on the tongue, slightly numbing on the tongue.

Keg (6.3%) @the BrewDog AGM. It pours clear golden with a medium white head. The nose is nose is fresh, floral, peppery, herbal, hay, light sweetness and graininess. The taste is crisp, bitter, straw, herbal, mild tartness, lemon peel, pepper, some warming and floral notes with a dry, spicy finish. Medium body and fine carbonation. Solid saison by all accounts.

Keg at Brewdog AGM 2014. Not 100% sure this is the right beer though... 6.3% and a straight-up white-peppery saison. Light lemon too. Nice.

Not sure if I would put this in the spice/herb category, as it is pretty much a straight up saison, with some additional flavors. Everything about this says saison, with the lavender coming to fruition at the finish. Pretty flavorful as the added ingredients bring out the floral nature of the saison. Much better than rated, and possibly mis-categorized.

Bottle. Just hazy gold with an inch of white head that fades fairly quickly. Aroma of lemon pudding, hay, a little dough, flowers, some hippie fly-repelling candles. Medium bodied, highish carbonation. Sweet dough and apricots, citrus that verges on harsh. Dry at the end with fairly high bitterness and not entirely pleasant herbal notes. Just a modicum of restraint on the additions and this would have been OK.

Pour is a cloudy orange with a average white head. Aroma is fruity, estery with some wheat malt and spice. Flavor is a nice juice fruit to start. Then comes a bit of spice and a nice herbal floral. Finish is lemon zest with what I’m guessing is the thyme. Decent beer and a different take on a saison.

Bottle. Pours a hazy yellowish gold with a white head that lasts throughout the beer and laces. Aroma has notes of sweet grains with some sweet lemon, lavender and other spice underlying. Flavor has a good amount of lavender with some sweet grains, a good amount of light fruits and a hint of of the light spices.

12 oz bottle, thanks Brenn79. 2014 release. Aroma is packed with the lavender, along with an earthy Belgian yeast strain, dough, tea. Pours hazy pale yellow with a one finger white head that falls after a minute. Taste is packed with spices, sweet, savory, finishing with an uncharacteristic (for style, not for Stone) bitterness. Body is thinner than expected, mouthfeel is creamy. I really like it. Glue...yum.
