Une fois la fermentation terminée, elle est élevée durant plusieurs mois dans des barriques de chêne ayant contenu du bourbon, ce qui lui confère des arômes de vanille et de bois, complétés par des saveurs de bourbon.

Draft at the Brew Tavern, Nottingham. Jet black with a tight tan head. Aroma and taste are bourbon boozy rich and sweet slight chocolate bitter. Rich boozy finish.

A pillowy, well laced tan head on a near black body. Coffee, wood shavings, ripe berries, bourbon and vanilla on a big compex nose. Lots going on in the taste profile from the onset. Solid fresh ground coffee mixes with vanilla, molasses, roasted malt, cream and a slight bourbon burn. Apricots and woodiness are subtle but under there aswell. Slightly sweet but not sticky or cloying, which is a sin committed by many monumental ISs. One of the very best.

Shared a third at the fab Sutton Arms, Great Sutton Street, London EC.
Appearance dark browny black with reddish glints.
Aroma quite gentle with distant tang of tobacco, liquorice, and stronger chocolate whiff.
Pours with a small darkly creamy head that's subsides to a dark cream ring around the top of the stout.
Taste belies the strength. Alcohol taste gives way to a gorgeous stout. Initial mild coffee and tobacco notes dissipate. Predominant is milk chocolate. Aftertaste is chocolate and mild coffee with a slight bourbon barrel kick. Taste really lingers with chocolate dominant, back notes of tobacco and woody bourbon barrel.
Mouthfeel is surprisingly creamy with a gently warming alcohol heat after several sips.
It doesn't taste/feel like a 9.5% beer.

Cask at volo during the cask days after party.
Jet black pour, with no head. Was served a little too cold, but i made sure to allow it to warm.
Big aromas of roasted malts, coffee, bitter cocoa, and some really evident oak, and vanilla. The bourbon doesnt make mucf of an appearance till the end. The mouthfeel was a little thin, and the carb was zero, but its a cask, so ill let it pass. The finish was a touch sweet from the bourbon, and had a good dose of bitterness from the intense roasted malts, and coffee notes. A really nice beer.

Tap at Peders Turns 8 - Vol 2, Copenhagen 07/12/2024 Chocolate and dark caramel and toffee, some nice coffee roast, brown sugar sprinkle, full body, some vanilla and lovely bourbon into the dark malty finish. Great stuff.
I need to start smoking again because it smells slighty of northern New Jersey... and for those who don't get that reference ... trash.
