Spontaneously Fermenting Yeast + Pale + Sour

Fermented with a locally harvested culture of yeasts and bacteria from the orchards that Somerset is famous for.

The wet climate of Somerset is perfect for the orchards and pastures that are the lifeblood of our area, they are also perfect conditions for the yeasts, bugs and critters that we need to make a unique sour beer.

Somerset Wild is a beer that shows how much we love working with our environment and the seasons to produce idiosyncratic beers that leave you questioning your perceptions. A beer with the acidity levels of a white wine or farmhouse cider, with a depth, complexity and refreshing drinkability to it that makes it a wonderful beer to pair with food.

This is a magic beer to enjoy with fish, particularly oily fish such as mackerel or sardines, caught off the south-west coast, or even better why not try it with a ceviche. The acidity of the beer will work as the perfect accompaniment.

Bottle from a corner shop. Appearance - hazy yellow with a quickly disappearing head. Nose - bread and tart apple notes. Taste - tart apple sauce. Palate - close to medium bodied with a rich tangy texture and a long dry tangy finish. Overall - like it but prefer more fruity notes in my sour beers. Interesting but not as good as it is interesting.

Bottle shared with Van Moll crew @ Van Moll Brewpub. Clear pale golden color, virtually no head. Aroma is sort of cider like, apple and cucumber. Taste is sourish, cucumber, applepeel, grapepeel, salt, tart, a sharp sourness in the finish. Weird and barely drinkable, but an interesting experiment. Wonโ€™t buy it again though.

330 ml. bottle sampled. BBF 25/05/2019. Purchased @ Caigny. Clear apple golden, little white head. Nose is quite off-putting in a unique and highly intense way, nasty rotting lactic with a oddly very big spoiled cucumber note, pickle juice, vegetable,โ€ฆ Taste is luckily milder but still, vinegar, lactic cucumber, spoiled cucumber, pickle juice, huge bottle lemon juice, acidic,โ€ฆ Thin, watery & fizzy. I appreciate the idea & intention but this is just a bit too unpleasant & undrinkable for me. This beer is proof that complexity doesnโ€™t equal pleasantry and that too many people get hanged up on the idea that beers need to be complex in order to excel. There is such a thing as too experimental or at least there is for me. For me it seems like for every Wild Beer that I like there is one that hate.

330ml bottle. Hazy pale yellow colour, short-lived white foam head and aroma of tart lemon, funk, pickled gerkins. Taste is tangy, sour citric lemon, with wheat and grain, some hay, lactic, barnyard, apple cider, vinegar and pickled vegetal notes. Sharp mouthfeel, light bodied, fine carbonation, dry sour finish. Interesting, refreshing.

On keg at Coach and Horses, Dronfield - Pale yellow, slightly hazy por, little or no head. Nose is the same as any fizzy cider, loads of apples not much else. Taste has a wonderful dry kick, loads of crabapples, brett and sour yeast. Finish is as dry as the start. Loved it.

Itโ€™s a cloudy lemon yellow colour, no foam to speak of.

Sour wheat and a very musty smell.

Sour tasting with a musty barnyard flavour but not in the Brett way.

Light body and carbonation.

Nice.
