Night Stalker, as an homage to the Chicago-based television show. Night Stalker is a jet black, dry hopped Imperial Stout, extremely rich and full flavored with malt and chocolate followed by a bright dry hopped aroma. It is the same base as our Bourbon County Stout, but instead of aging in Bourbon barrels, we dry hop it like madmen.

A deep dark stout with a thin brown head. In aroma, sweet fruity chocolate malt with light soy sauce, alcohol warmth, light licorice, very nice. In mouth, a nice sweet chocolate malt with light licorice, alcohol warmth , light molasses, very nice for a 8 year old beer. Bottle at Sébastiens birthday party, April 14 2018.

Many thanks to Countbeer for sharing this beer! Pitch black although there’s a barely visible red glow coming through when held into the light, brown head. Smell hops, caramel, dark chocolate, just so complex! Taste the same, absolutely fantastic! Soft carbo for 11%ABV, but so so suitable for this beer! Full body, such good mouthfeel!

Bomber from Wine & Cheese in Clayton, MO. Pours very black with a dark tan creamy head. Aromas of dark malt, chocolate and liquorice. Full bodied. Flavor is all of the foregoing with perhaps a touch of treacle. It’s not bitter, but there’s apparently enough hop to keep it from being excessively sweet. With a little time some hop shows up in the nose. So of course hop becomes a more prominent flavor with time. But on one level this is a big, gooey, but not all that sweet ale. AND!!! Not a trace of heat. Wowser!

22oz bottle from Chuck’s poured into a snifter. Says it was bottled on 2/6/11 Tiny amount of dark tan head that dissipates quickly but leaves nice lacing. Color, obviously, is blacker than black. Aroma is very malty. Nice caramel, chocolate and coffee notes. Slight hop scent to go with it. Taste is heavy bitter and lightly sweet. You can definitely taste the 11.7% ABV. Strong coffee bitterness and some nice caramel sweetness. It loses bitterness and gains sweetness as it gets warmer. Very good! Full bodied with a thick texture. Minimal carbonation with a long long long bittersweet finish. Overall, this is an awesome beer. Something I would definitely buy again if I could find it. The only downside is that you can taste all of the alcohol in here. If the alcohol taste was covered up more it would have been an A+ beer!

Bomber. Deep black body. Frothy brown head slowly diminishing. Aroma of roasted malts, sweet licorice, thick molasses, dark chocolate, alcohol. The flavor is heavily sweet and lightly bitter. It finishes moderately to heavily sweet and lightly to moderately bitter. Full body, creamy texture and moderate carbonation. Roasted bitterness in the finish. Tastes of chewy molasses with peppery notes. Cloyingly sweet. Little balance. A mess in the flavor.

(Bottle, Monk’s Porterhouse, Stockholm, 13 May 2011) Opaque black colour with brief head. Malty, roasted nose with sweet espresso, cocoa, dark chocolate, dark rye bread, raisins, soy sauce and a hint of tar. Malty, roasted taste with notes of sweet strong coffee, dark chocolate, dark rye bread, raisins and a generous coffee bitterness in the finish. Full body, well rounded and smooth mouthfeel. Fairly sweet. Lovely beer!
