330ml bottle @ Mikkeller Bar
Pours clear orange with a tiny head. Aroma of wood, ripe fruits, oak, yeast and spices. Taste is smooth, ripe fruity, oaky and woody with some yeast and spices. Finish is vinous but lovely smooth, sweetish and ripe fruity with some vanilla, wood and oaky notes. Quite vinous, well balanced and well aged Belgian strong ale. Cheers laiti for #5000!

33 cl bottle @ Mikkeller Bar
my 5000th rating!
Aroma has toffee typical to aged beltian ales, some apricot and alcohol. Also some moldy cellar tones. Flavour has lots of apricot, some cellar tones and hints of peaches. Also some white wine tones. Alcohol is present, but it only makes this a slow sipper without disturbing. And it feels like "barrel alcohol". Some cardboard tones occur after a couple of sips - perhaps still a bit past its prime after all. Also some bourbon-like sweet barrel notes and more grapefruit at last sip.

Thanks to bu11zeye for this bottle. Pours translucent copper with a transient beige head. Aroma mildly sour fruit. Near med body. Lots of wood. Some brown sugar; some heat; ripe light pitted fruits. Maybe a touch of date/raisin in the finish. Very good! Aged nicely.

Old notes, no idea from which event or tasting. Just wrote down the flavors which were winey, oak, a touch of sour. Ok, but not my favorite.

Bottle at Mikkeller Bar, pours a cloudy dark orange with a small white head. Aroma of Belgian yeast, sour fruits, some turpentine, and paint thinner. Flavour of white wine notes, turpentine, oak barrels, and Belgian yeast. Super complex, but too much paint thinner quality, on top of the vinous notes. Way overrated. Not of top tier as the ratings suggest.

Bottle shared with Bruce and Leighton at DHVL, 22/03/13. Hazed mid golden with a medium sized off white head that retains well. Nose carries sweet brown sugar, burnt rubber, almonds, dark toffee, light must, touch of alcohol. Taste comprises sugars, booze, marsh mellows, toffee, background fruits. Fullish boied, touch of booze in the finish. Decent but wouldn’t part with as much cash to try this again.

bottle @ kulmi . pours blonde, white foam smell is sour, sugary, yoghurt. feels thick, lots of carbo, yet not TOO much. sugary, caramel, sweet, sour, yoghurt, SO DAMN UNIQUE i even get like the taste that reminds me of the smell of a room where there have been smoked cigars, but now the scent has fadesd a bit.. very weird ! tbh, itsd not my favourite taste but the thing is with all stille nacht’s , they’re just so unique, and that, is exaclty what i want in a beer. uncomparable things are ALWAYS better

0.33l bottle @ Kulminator. Finally! My god! It looks like a bloody snow storm in the glass! Bubbles all over the place. On top a big big-bubbly off-white head and in the body a dark almost copper-honey colored thing with trillions of bursting bubbles shimmering to the surface. It looks amazing! The aroma is, well, in lack of better words I'm going to say amazing. It's sticky and sweet, but it's so hard explaining this one! Dates and dried fruits is perhaps the closest I'm going to get. There are just so many things going on here! Impossible for me to tear apart. It actually reminds me a bit of utopias! Yeah that's what it in a strange way reminds me of! It has that sweetness and fruitiness like a soft younger brother of utopias might could have had! Ok, let's taste it: YES! Score! It's strong, sweet, fruity, sticky, boozy, pepperish, with candy, bitterness, licorice, hops, Christmas, spices, calvados, alcohol and dates. My oh my. It's just so round, inviting and delicate considering this is actually a brutal Belgian at 13% ABV. What a beer. Savor this moment Palme, cause I think it will be a while until you get another one as nice as this. 02.06.2012

Bottle at Mikkeller. It pours clear amber with a small off-white head. The nose is gingerbread, toffee, baked apple, pear, spice, wood, leather, alcohol, faint oxidized notes, raisin and date. The taste is wood, earth, vinous, brandy, toffee apple, pretty high alcohol heat, winter spice, raisin, plum skin, tinned nectarine, over-ripe peach and orange peel with a long warming finish. Full body, fine, prickly carbonation and slightly sticky mouth-feel. Well-integrated. Great depth of flavour. A nice winter warmer. Perhaps still a bit boozy, but an enjoyable beverage nonetheless.
