This cross-cultural brew was first made at the request of an Irish musical group and was named "Celtic Heaven," but soon became a permanent part of the Serafijn lineup. Similar to a light Irish ale, but but with the intriguing of a spicy, almost perfumed aroma that comes not from spices but from a special Belgian yeast.

Something between an Irish red and a Belgian amber, with yellow white, thick but not very stable, moussy head and misty copper colour. Fruity aroma of mango, melon, pear, passion fruit, also tomato, ginger, whisky, walnuts, cake, honey and some DMS (cooked cabbage) as well as an ever so faint hint of H2S (rotten eggs). Soft caramelly taste, fruity, yeasty, medium carbo, medium bitter finish.

21/III/14 - 33cl bottle from Willems (Grobbendonk) @ home - BB: 15/II/14 (2014-300)

Note: so, the beer has passed it's BB-date. Apparently for this beer, that is not a bad thing! I loved it. Guess I'm a sucker for old beer. :p
Clear dark orange beer, small aery light beige head, little stable, bit adhesive. Aroma: sweet, caramel, dried fruits, bit oxidized, honey. MF: ok carbon, medium body. Taste: sweet malts, caramel, little toast, spicy, some honey, orange peel, little sour. Aftertaste: sweet, dried fruits, bit sour, dry ending. Good balanced and complex beer.

It’s not really a Christmas Tasting in Odense. Amber with a big white head. Weak fruity aroma with some caramel. Sweet malty flavour with yeasty notes and quite a bit of alcohol

33cl bottle @ home. Clear dark copper to amber color, no head, just a small white to off-white lacing. Smell almost nothing. Taste malts and a sharp spicy bitterness. Fizzy carbonation, low to medium body.

An unexciting, fairly mediocre Belgian. I was looking for a calm, middling beer tonight, and even that relatively low bar was not met. The beer pours a normal enough warm brown-amber color with an extremely effervescent head. The head puffs up hugely at first, filling the glass with bubbles with only a couple inches of liquid. Despite all of this initial excitement, the head actually dissipated quite quickly and left very little lacing. Mouthfeel is under-carbonated. The smell is really lacking. It’s a flat, yeasty odor with very little of the normal complexity of good Belgian yeast. The flavor is somewhat better but still odd. It’s sweet with a fair bit of caramel and bread malt flavor, but it’s not really very interesting or complex. The bitter yeasty flavor is also there in the flavor. There is a merely passing earthy Belgian note. The beer just doesn’t come together
