Coolship Cerise’s tart, dry profile is rounded out by notes of fresh-picked cherry, pie spice, oak, and a hint of apricot. To make this beer, we fill our coolship—a large, shallow pan-like brewing vessel—with unfermented wort that gathers wild yeast as it cools. The beer then ferments and develops its flavor in oak wine barrels for up to two years before we add 100 pounds, per barrel, of locally grown Montmorency and Balaton cherries. We hope you enjoy this balanced, crisp, and complex taste of Maine.

Bottle from the source shared with ajax25g. Cloudy pinkish red color, pink champagne head. Aroma of dusty cherries and funky lemons, red licorice candy. Taste is gorgeous dusty and sour fruit and berries.

Pale, slightly hazy pinkish colour, reminding of a rose hips drink. No head. Cherry aroma, wood and funk. Quite tart flavour, citrus, lemon peel, light astringent. Funky finish, cherry, wood and tannines.
Nice brew, but in both fruitiness and complexity it is blown away by its sister, the Coolship Red.

Pink strawberry gorgeous Nose is raspberry lemons and watermelon. Taste is wow. Loaded with raspberries and tart lemons. Woody and a very clean mildly sweet finish. Dry grape skin

Big thanks to whomever hooked me up with this! Pours a hazy full red with a pinkish head that dissipates to the edges quickly. Aroma is full of cherries that are tart and sour with a nice earthy funk note. Flavor is also full of sour and tart cherries with a good funk note and even a hint of dryness.

Clear pale orange to light pinkish beer, big fluffy white head, unstable, non adhesive. Aroma: very cheesy, dusty, onions, sweet raspberries, some forest fruits, a certain bretta quality as well, surprisingly. MF: ok carbon, medium body. Taste: bit cheesy, onions, almonds, little bitter, bit fruity, cheesy stuff, raspberries, bit lemony, touch of bitter lemon peel. Aftertaste: little bitter, some red fruits, sweet touch, bit cheesy, more bretta stuff, almonds, bitter peaches. Could be a real Belgian fruit lambic for all I know, but not a Kriek. The fruit is too different. Still, a job well done!

Bottle @ home, cracked open to celebrate finishing my second master’s degree and the crown jewel of JetsonFest II. Opened the 375 with a slight pop though it didn’t gush. Beautiful pinkish peach, cloudy appearance with a mild to moderate sized white head. The aroma just has a ton of cheese, funk, and barnyard elements very reminiscent of a nice Belgian-made gueuze. The cherry element in the nose is fairly mild but packs a mild tartness and a nice sweet, pie-like aroma. Tons of cheese in the nose. I’m in love so far. Quite tart pie cherry taste in the flavor that is again a bit in the background compared to the cheesy, funky elements. The tartness does jump in and pucker your cheeks immediately. Good carbonation leads a refreshing acidity. The cheesy, funky, lactic/lemon element, while quite prominent in the flavor, isn’t as perfect as the aroma. Puckering, funky finish with a very nice, lasting aftertaste. I think maybe I would have liked a bigger cherry presence, but fuck, beggars can’t be choosers. Aroma was unbelievable. Tasted next a 2009 Cantillon Kriek and the aroma on this one was far superior and far less sour in the flavor.

Bottle shared at tasting at my house. Pours grapefruit color. Nose/taste of cherry skins ant pits, peach, oak, cheese and yeast. Mild tartness. Medium body.

On tap at Ebenezer’s a little 5 gal keg off to the side. A big thanks to Chris for hooking me up with this glass. Pours out a hazy golden/copper topped with a small white head. Aroma was very nice lots of cherries, funk, wood, and some sweetness. Taste was as the aroma with cherries, and a little Brett.

Bottle at Mes Tasting. Pours a lightly hazy, yellow-gold. Acidic, funky aroma with sour cherry notes. Quite sour, light sweet, definite cherry notes, mild wood. Light to medium in body with fine carbonation. Lightly dry, woody and sour finish with some lingering cherries. Very nice.

Bottle 375ml.Unclear medium orange yellow color with a average, frothy, good lacing, mostly lasting - diminishing, off-white head. Aroma is moderate to light light heavy barnyard, berries, cherry, almond, tart, sour. Flavor is light heavy sweet and moderate acidic with a long duration, yeasty and sweet. Body is medium, texture is oily, carbonation is soft. [20100624]
