Pours rather unclear blonde. Small white head. Smell is phenolic, but not as intense as you'd expect from a saison. Taste is sharp, rather bitter, dry, typical saison phenols. OK

Apparently last month’s Maîtresse (but brewed in November), a saison brewed with rye and wheat, hopped with Challenger and spiced with ginger and other ‘Gruut spices’; one of the Maîtresse beers still available at Gruut’s tasting room but only from bottles of 75 cl. Shared such a bottle with my girlfriend there. Snow white, mousy, medium thick, slowly dissipating head over an initially almost clear, pure ‘old gold’ coloured beer, turning lightly misty and pale-orangey with sediment added, lively visual sparkling. Aroma very strongly dominated by dry ginger root, even ginger candy and ginger cookies, overpowering more basic features of bread crust, red apple, lavender honey, chewing gum, sweetbread, old cake, chewing gum. Sweetish onset hinting at apple peel, apricot and banana, medium to softish carb, light sourish undertone, slick and – due to the ginger spicing – bit glueish mouthfeel. Cereally and lightly bready middle with a background touch of rye spiciness and more obvious wheat sourishness, thin metallic edge, quickly and thoroughly drenched in ethereal, eventually – unsurprisingly – rather wry spiciness, with the ginger upfront but lavender-, anise- and clove-like hints as well (probably partially phenolic). The ginger does have a ‘warming’ effect, its typical heat still preserved, feeling almost medicinal. Overdone in the ginger, but still interesting, if a bit challenging and not for everyone. ‘Saison’ only in the most generic and classically Belgian way.
