This Sour Saison was inspired by our good friends at Off Color Brewing. John has a way with light, funky fresh beers, that we find magical. To emulate this, we took a grist bill of Pilsner and Pale malt, added German Hallertaur hops, and then let it mature in oak for 9 months. This Saison is extremely quaffable with subtle notes of lemon, citrus, and funk, followed by a refreshing tartness.

Bottled 750ml. -at Goblet Zagreb. Bottled on 15.08.2018. Unclear yellow/pale orange coloured, small white head, sourish fruity nose. Sourish fruity, light barrel, notes of quince and slightly funky with touch of oxidation. Quite dry finish.

Aus der Flasche im 2021-08 getrunken. Dieses weißweinfarbende Sour Ale kommt mit einer ganz kurzweiligen, hellen Schaumkrone daher. Am Gaumen kommt neben den moderaten Citrus Säure eine leichte Hopfennote durch. Nicht schlecht aber haut mich nicht um.

Hazy, pale yellow color and a nice white head. Tart nose, peachy, orange, perfume, decent funky. Sour, acidic, fruity. Nice cask influence. Really dryish finish

Draught @ City Hops (10/2/19). Faintly cloudy pale yellow with small foamy white head, lightly acidic aroma, medium carbonation, medium sour lightly earthy taste, smooth body, long medium sour finish. Very well balanced sour.

On tap at JPC as well as a growler. Unfiltered orange-tan body. Funky, sour. Classic JP funk tones , maybe mixed with a little of that Off Color yeast which seems to impart some white wine tones. Really tasty, held up well in the growler too.

750 ml bottle into tulip glass, bottled on 8/15/2018. Pours slightly hazy pale golden yellow color with a 1 finger dense and rocky white head with great retention, that reduces to a small cap that lingers. Nice dense spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart lemon, lime, orange, citrus peel/zest, peach, pear, apricot, melon, red/green apple, white grape/wine, oak, peppercorn, hay, straw, grass, cracker, white bread dough, light leathery/musty/lacto funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic/spicy yeast, oak barrels, and moderate pale malt notes; with big strength. Taste of big tart lemon, lime, orange, citrus peel/zest, peach, pear, apricot, melon, red/green apple, white grape/wine, oak, peppercorn, hay, straw, grass, cracker, white bread dough, light leathery/musty/lacto funk, and yeast/oak earthiness. Slight touch of white wine vinegar in aromas/flavors. Light-moderate lactic tartness, Brett tang, and yeast/oak tannin spiciness on the finish. Lingering notes of tart/tangy lemon, lime, orange, citrus peel/zest, peach, pear, apricot, melon, red/green apple, white grape/wine, oak, peppercorn, hay, straw, grass, cracker, white bread dough, light leathery/musty/lacto funk, and yeast/oak earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, oak barrels, and moderate pale malt flavors; with an awesome malt/tart/tangy/spiciness balance, with no puckering/astringent flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering tang/tartness, yeast/oak spiciness, and carbonation. Medium-plus carbonation and light-medium body; with a very smooth, moderately creamy/bready/grainy, and acidic/tangy/tannic balanced mouthfeel that is great. Zero warming alcohol for 5.8%. Overall this is an awesome sour/wild saison. All around awesome complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, oak barrels, and moderate pale malt flavors; very smooth and fairly crisp/refreshing to drink with the mellowly acidic/tangy/tannic/drying finish. Nicely soft and not overly lactic. Awesome well rounded classic JP Brett/Bacteria/Saison yeast complexity; with great oak presence and pale malts against acidity. Mild residual sweetness with crisp dryness. A really enjoyable offering, and impressive spot on style example. Right on point with expectations.
