Sensory Profile: Hops, and lots of them. The aroma is bursting with the classic citrus and pine aroma of American-grown hops. The flavor is dominated by a hoppy bitterness, with just enough malt to make you want to take another sip.
Food Pairing: This beer needs an assertive food to stand up to it. Match Captain’s Reserve with aged cheeses such as Stilton, cured and grilled meats.

Bottle. Blonde. Grassy oily hoparoma with melon and grapefruit. Malty sweet, oily hopflavor with melon, pineapple and grapefruit. Well made DIPA with a satisfying balance.

Bottle thanks to Toby. Pours out a dark golden topped with a white head. Nose is pine floral notes some bitter grapefruit hops and bread. Taste is more of the nice big bitter hops and a well balanced malt bill.

On tap. Pours amber with light foamy head. Aromas of oranges, pineapple, pine and dough. Flavors follow with bitter citrus rind, toasted malts and more bitter pine. Peppery. For those that like a bitter DIPA.

This one was poured into a tulip.
The appearance was a nice hazy golden color with a one and a half finger white foamy head that dissipated within less than a minute. The lacing coats the sides of the glass nicely and ends up following the beer in a nice gentle slide.
The smell had a nice conglomeration of spicy and sweet citrusy to grapefruity hops to lead to a pretty nice sweet malt background.
The taste took all of those flavors to combine very nicely and let it settle into a dry finish with no aftertaste.
On the palate, this one sat about a medium on the body with a fairly decent sessionable aspect about it.
Overall, pretty good DIPA worthy of having again.

Leaving the near inch of sediment at the bottom, the beer pours a beautifully bright amber-tinged golden with a small white head and plentiful (bottle-conditioned?) carbonation rising to produce moderate retention.
Huge juicy fruit nose has moderately sweet pale malts backing it, with more red grapefruit and oranges emerging with warming. Seems like a good dose of simcoe, cascade, maybe citra. Lots of the citrusy/tropical variety, though tending more citrusy. Lighter on the pine and thankfully no alcohol fumes (though it’s still fairly well-chilled at this point).
More citrus and tropical fruits in the flavor are very well-integrated with the nicely rich, balancing pale malts, leading to candied orange, apricot jam and light cherry and ruby red grapefruit. Wonderfully deep hop profile. The carbonation is light, but rather tight and creamy, giving the beer a very comforting texture and lending drinkability. Some hop acids build up on the finish, drying the palate and leaving some light astringency. The flavor dosent linger all that long, due in part to some wateriness and also the acidity.
That initial juicy, tropical fruit flavor mixed with the sweet malts is enough to make me keep drinking, but it does begin to fatigue the palate, and all that with this being well-chilled to start. Still, it’s delightfully clean thanks to all that yeast on the bottom and I’m not going to complain too much, as I have an admittedly low tolerance for hop acidity.
