Fractal Mosaic is the first release from our small-batch Research Series. A fractal is something simple at the core yet can produce wonderful and amazingly complex results. The fractal series will have only pale malt and a single hop (simple). We will use these beers to investigate how different hops manifest through our processes, allowing us to optimize both our use of hops and our hopping techniques. Fractal Mosaic pours a resinous-hazy-straw yellow releasing complex aromas of dank citrus, earthy grass, tropical melon, and a hint of berries (complex). The taste is highly resinous, piney, juicey, with a slightly creamy mouthfeel, and a firm but rounded bitterness. The medley of characteristics makes the name “Fractal Mosaic” warranted indeed.

Canned. Poured just fine. Tropically fruit forward neipa. Not much else to say about this one.

Pours hazy pale yellow with a one finger white head. Smells citrusy. Lightly resinous. The flavor is mildly bitter with citrus, bready malt, and a little pine. Wouldn’t call it “highly resinous” as the description does. It’s alright but nothing special.

Notes from 11/27/16 On tap at Three's Brewing. Stemware... Why? Slightly hazy, straw-colored body. Wishy-washy lace. Smell is insanely curious. Lemon-lime & cotton candy & orangey hops come to mind. Taste throws me a little. A touch sour and malty, but with a definite tropical edge to it. Thin, with a little residual thickening it up. Quiet carbonation. I'm not so sure about this one.

Undated can from Fort Point Market fridge, drunk 12/19/21. Medium haziness and a bright, sunny orange-golden body with a large, well-retained, white head atop. Mineral, bubblegum, big juice overtones and a classic, green, woodsy, lightly piney, Mosaic-character to the hop with dense, but seemingly well-attenuated malts and no alcohol, hop twang or flaw. Big melon and bubble gum notes remind of Tree House, maybe something like Sap. Soft and dry with a creamy consistency and tons of bubble gum and mineral alongside the vaguely fruity, vaguely piney, vaguely woodsy character that is Mosaic. Really well-done beer - I just find this hop so incredibly underwhelming.

Pours a hazy, golden-orange, with mid-sized head. Aroma is dank, with sour sweatsocks, some green onion, and a touch of cheese, along with the usual tropical fruit and citrus. Flavor is very juicy, tropical and citrus fruit, with some sweetness and just a touch of hop bitterness in the finish. Soft mouthfeel. This is a really good beer.

Draft at the brewery. Murky golden-orange color, white head, heavy / coating lace. Juicy and smooth. Grapefruit and some pine. Resiny. Bit of grass. Nice, clean feel. Quite tasty.
