Bourbon Baby is a baby Scotch ale which we’ve gone on to age in bourbon barrels.

The Scotch ale base is light bodied and low ABV, and brings toasted shortcake and blossom honey flavours; the barrel ageing adds a demonic, dark vanilla twist. Rich brown sugar, hints of smoke, spiced fruit, chocolate and raisins are just some of the multitude of flavours that have developed.

Our aim was to showcase barrel ageing in a lower ABV beer and we felt the malty scotch ale base was the perfect way to do this. The body remains light, yet there is a complexity quite unlike anything you would normally expect in a Scotch ale.

Bourbon Baby is a small batch beer and is available in limited quantities in bottle and draft, and will cope with further ageing in the bottle but is best suited to drinking fresh.

We worked closely with Tom and the team from Honest Burger to develop not only a perfect beef patty topped with beer candied bacon and a beer BBQ sauce, but also the ideal brew to sip alongside it.

Bottle from Systembolaget Drottninggatan. Brownish with a slightly tan head. Aroma and taste of vanilla, oak, malt and bourbon. Drinkable but with a light mouthfeel.

Huge rusty-cream head over brown-black beer with ruby highlights. Sweet-chocolatey nose; vague Bourbon notes, alcohol. Mild bitterish roast over sweet dark malty underbuild. Not much vanilla, nor Bourbon. Most obvious is the throat-warming influence, despite the low ABV. Medium bodied, slick, medium carbonation. Baby, not bomb - unless you count the malt.

Dark mahogany, ruby hue, medium to small tan head. Aroma is of brown sugar, some spices and loads of vanilla bourbon. Taste is medium sweet malt, brown sugar, toffee, bit of dark fruits, toasted touch, vanilla, bourbon barrel. Medium bodied, oily, soft carbonation. Bourbon is extremely dominant in this one which is fine if you like bourbon and want to mix it up in beer form. But if not... (bottle, Brewdog Brussels)

Draft at Brewdog Brussels. Pours near black with a small tan head. Aroma is completely taken over by the bourbon, in a good way, along with oak barrel notes, fudge, chocolate and a touch of ripe fruits. Flavour is light heavy sweet and light bitter. Medium bodied with a slightly thin mouthfeel and soft carbonation.

Dark ruby brown with a lasting off-white head. Aroma of caramel and dried fruit with a touch of whisky. Sweet malty and fruity flavour with a roasted note

Smell of raisins, oak, cognac. Deep bronze colour, brown head. Aroma of cognac, oak, overripe fruit. Some malt and vanilla in finish. Sweet, slightly bitter. flat carbon, slightly oily texture.

330ml bottle from Vinmonopolet Langnes. Clear and bright mahogany coloured body. Bubbly, tan-coloured head, good retention, and nice lacing rings down the glass. Prominent brown malts and oak vanilla on the nose, added by a spicy touch. Oak, earth, dark honey and sweet brown malty flavours. Bourbon backdrop. Smooth. Medium bodied, in fact, a bit thin on the swallow. Pleasant stuff (celebrating the election, Tromsø 14.09.2015).

Pours dark brown with a large, creamy head.Nose shows bourbon, woody oak, vanilla, golden syrup and treacle.Very similar flavours, more oak, bourbon, golden syrup, bready malt, before drying out a bit.

Appearance is very dark ruby, almost black, a beige foamy covering for a head. Aroma- lots of vanilla bourbon oakiness, caramel malt, toasty, hint of fruitcake. Taste- vanilla sweetness, burnt toast, caramel, treacle toffee. Thin mouthfeel, unsurprisingly, but a lasting, sweet finish. Good stuff.
