Bourbon Baby is a baby Scotch ale which we’ve gone on to age in bourbon barrels.
The Scotch ale base is light bodied and low ABV, and brings toasted shortcake and blossom honey flavours; the barrel ageing adds a demonic, dark vanilla twist. Rich brown sugar, hints of smoke, spiced fruit, chocolate and raisins are just some of the multitude of flavours that have developed.
Our aim was to showcase barrel ageing in a lower ABV beer and we felt the malty scotch ale base was the perfect way to do this. The body remains light, yet there is a complexity quite unlike anything you would normally expect in a Scotch ale.
Bourbon Baby is a small batch beer and is available in limited quantities in bottle and draft, and will cope with further ageing in the bottle but is best suited to drinking fresh.
We worked closely with Tom and the team from Honest Burger to develop not only a perfect beef patty topped with beer candied bacon and a beer BBQ sauce, but also the ideal brew to sip alongside it.

Bottle, 330 ml from the brewery shop. Pours dark reddish brown, beige head. Smells like old wood, old churches. Roasted malts, caramel, bit of ripe fruit, bourbon, vanilla. Sweet. Seems bit thin.

Tasted from the tap on the 04/03/2016 at the Barcelon Brewdog Bar. Dark brown colour with a medium to low white head. Aroma of oak, alcohol and dark fruits. Taste is malty, oak and fruits. Next one please!

0,33 flaske på Frederiksberg ølbar, min nye oppdagelse! Servert i et Brewdog-glass får jeg et flott skum som varer til bunns og vel det. En velbalansert scotch ale som bærer fatlagringen med eleganse. Bærsødme med vanilje, honning/brunsukker, rosiner og mere til. Kraftkost for viltre krabater, så jeg måtte la litt stå igjen siden jeg skulle videre på min mosjonstur.

Clear, dark red brown with light beige froth. Aroma has bourbon and wood, dark sugar and hints of vanilla. Flavour is woody with watered down bourbon. Disappointing considering the promising aroma. Notes of chocolate and caramel. First impression is a little thin but it gets better as is warms up a bit.

Bottle 33 cl. Pours a clear, dark, reddish amber with a beige head. Very intense, sweet Bourbon aroma. Fairly light in body, dry burned caramel accents but the Bourbon notes are completely overpowering. But somehow it all comes together. 031215

Flaske 330ml fra Vinmonopolet Tromsø - Langnes. Drukket på Bergstua 31 Aug 15. Dyp mahognyfarget. Middels høyt kremaktig skum med litt farge & filigranser. Søt whiskyaroma. Oljeaktig munnfølelse. Smaken preget av søt malt med en velintegrert whiskysmak. Lang ettersmak. Bra.

Bottled, from Systembolaget. Dark brown, mid sized beige head. Intense peaty vanilla aroma. Mid sweet with medium body and rounded mouthfeel.Caramel and lots of bourbon, some butter. Fairly low bitterness.
