The Cellar Cuvee project is based on the art of blending. multiple strong ales are married together after aging in oak barrels in our cellar. Cellar Cuvee 11 is a blend of five distinct barley wine style barrel aged beers. Dark to pale, hoppy to malty sweet, all were aged in bourbon barrels. This is a heartfelt tribute to a style that is too often overlooked and underappreciated. Reward yourself with notes of honeycomb toffee, bread pudding, and aged spirit by letting this decadent blend warm in the glass.

Taster at KEG. Almost-black brown pour with a tan head. It’s packed with walnuts, there’s also some chocolate, caramel, spicy oak, booze, bready malts, molasses and a hint of dried fruits. Big bodied with soft carbonation, true sipper. Lovely stuff.

Sample during Blarney Wine Festival 2025 on 03/15/2025. The beer is a clear mahogany color with a medium thin light beige head that recedes quickly to an outer ring. Small strings of lacing. Aroma of bourbon, malt, ripe fruit and hops. Full-bodied with flavors of caramel malt, oaky bourbon, fruit and earthy hops. The finish is oaky with a bourbon and malt aftertaste. Good beer all around.

11.6% version. Almost opaque dark brown beer, small tan head. Palate is surprisingly light and has decent fine minerally carbonation. Smooth dark malts, a smooth and mildly creamy chocolate vibe - rather nice! Plenty of bourbon - well delivered in a smooth barrel way, rounded and not too spicy. Good rich ripe bourbon soaked fruits. Good oaky vanilla. Whisper of damp wood. Smooth finish finally shows a little bourbon spice. Yeah - very well rounded BBA beer, feels a little more Impy than barleywine but no need to pick nits.

Bottle 375ml @ home Pours dark brown with a tan head. Aroma has notes of malt, dried fruits, caramel, oak, vanilla and alcohol. Taste is medium sweet and light to medium bitter with a long warm, dried fruits, caramel, oak and vanilla finish. Body is full, texture is oily, carbonation is soft.

Refrigerated 12.7 oz brown bottle poured into a glass. Dark brown with small beige head. Aroma is caramel, medium body, lower carbonation, and little lacing. Taste is caramel and wood.
