Brewed with a base of Pilsner, wheat, rye, and oats, and hopped lightly with Calypso and Azacca hops. A portion of the beer was soured with lactobacillus, and blended with the rest of the beer once the desired acidity was reached. Fermented with a blend of house brettanomyces cultures, and lightly dry hopped with Enigma hops before packaging. Funky, bright, super dry, lightly pithy. Notes of Pinot Gris, lemon zest, and rock melon, with a firm minerality and a touch of tartness.

Dull, pale, with a thin head. Mellow brett nose. Similar palate, light tartness and bright stone fruits. Off-dry finish. Good stuff.

Can. Hazy straw gold with a white head that fades to a cm. 3+ Funky aroma with nectarines, twigs, the laundry, dough, white pepper. Soft texture, medium high carbonation. Cleaner that expected and with a hoppy edge of fresher citrus as well sufficient bitterness to make a finish at the end. Perhaps slightly drier might have worked even better but this is right up my street.
