A full malt barley wine of 13% by volume, which is brewed once a year; fermented with beer and wine yeast.
With L’ensemble we find the limit. Not only the boundary of the maximum possible, because 13% is extremely heavy for a full malt beer. But also the boundary between beer and wine, because to get this amount of alcohol, a part of the fermentation uses wine yeast. Brewing and fermenting this unique beer requires much time and attention. Partly because we make this beer only once a year and comes on the market when it becomes winter season. A perfect companion to the Christmas season! Deliciously warming.

Sample from 50 cl. bottle. Hazy, amber colour with a dense, off-white head. Sweet aroma with fruits, booze, rich caramel malts, dark, dried fruits and spices. Taste is sweet. Full body with a thicker texture. Finishes dry and fruity with spices. Very nice.

Bottled. A hazy deepmred beer with a beige head. The aroma has notes of malt, caramel, and alcohol. The flavor is sweet with notes of caramel, over ripe fruits, alcohol, and herbs, leading to a dry alcoholic finish.

2012 edition (just over a year old), bottled. Clear, deep dark brown color with a red hue. Dense beige head with good retention. Aroma’s of sticky toffee cake, sweet red/dried fruits, alcohol. Less sweetness retronasal, but still lots of fruit, raisins, caramel. Flavor is light sweet, very fruity, dark malts, light bitterness. Alcohol feel is quite moderate given the %. Medium bodied. Finish gives the age away, slightly dry, caramellish and lightly bitter. I’ll try the next edition fresh. Still above average though.

Murky dark brown beer, bubbly pale tan head. Palate is light with mild fine carbonation. It’s not heavy at all! Nice tangy malt, touch of toffee,. Over ripe orange, very light spice and a whisper of red berry fruits that do not quite make the full Port wine vibe you sometimes get in these big barleywines. Bitterish caramel and light but bitter pine before a fairly neutral finish. Tangy fruit aftertaste. Hides the abv very well and it’s fully flavoured but it lacks the sumptuousness of the very best.
