After the primary fermentation for our Cottonmouth Belgian Style Wheat Bier is finished, we add fresh ginger, cranberries and Florida Orange Blossom honey and re-ferment to produce this slightly tart and colorful seasonal specialty. Hoe Hoe Hoe is an outstanding complement to holiday meals, and a refreshing change-of-pace that complements the wide variety of stronger winter seasonal ales.

Ingredients: Belgian pilsner maltt, wheat and oats
New Zealand organic Hallertauer snd Saaz hops
Freshly-ground coriander and Curacao (bitter orange peel)
Fresh ginger, cranberries and Orange Blossom Honey

Bottle courtesy of BMMillsy. Sweet citrusy cranberry and ginger aroma - floral honey developed more as it warmed, and a slight hint of vanilla. Hazy yellow with a moderate white head. Sweet tart citrus, fruity cranberry, dry ginger, and light honey wheat malt flavor. As it warmed floral white grape became apparent in the flavor. Medium body, soft carbonation. I really liked this approach to a holiday seasonal, as opposed to some of the heavily spiced options.

A hazed blonde wit with a thick frothy lacing white head. In aroma, a smooth sweet fruity malt with loads of bananas, cloves and light sulfur. In mouth, a smooth sweet spiced wit with cloves, ginger, light lemongrass, nice. On tap at Peg’s Cantina, Dec. 8 2012.

Draft @ FBGBF ’010. Pours hazy creamy sandy gold with tall lasting off white head. Cool looking brew. The aroma has plenty of spices, coriander, pepperiness and Belgian yeast. The tastes is smooth and gets kind of grainy and then picks up loads of yeasty spices and coriander by about midway. In the background I get a touch of lemon like acidity the plays off of the other notes with a refreshing degree of harmony. This is nice stuff.

@FBGBF-on tap–pours a big tight off white head and murky straw color. Aroma is creamy wheat, fruit, herbal. Taste is creamy wheat, fruit-cranberry, herbal-ginger, yeasty. Interesting.

Draft @ FBGBF ’10 pours cloudy golden, thin white head. A spiced up Cottonmouth for xmas? Interesting approach that indeed stays away from the usual cinnamon xmas ales I am used to seeing. Aroma is of nice light spices, mild bitterness and some tart elements of the cranberries. Flavors, light ginger palate, coupled with a mild attenuated cottonmouth-bubblegum mouthfeel mixed with some bitter orange notes. Possible Belgian yeast touch of champagne like yeast, a med-high carbonation. Cranberry is thin and adds a slight touch of tartness to the finish. Tasty.
