Indigenous to North Florida, it’s not hard to find this creature around the swamp. Its voluminous white head leaves wisps of lace on the glass and a subtle sweet finish that lingers. Indulge yourself with a homegrown wheat bier brewed in the Belgian tradition.
Cottonmouth is brewed using traditional witbier ingredients, however, we ferment it using a Belgian wheat bier yeast that produces higher levels of esters. The result is a unique Belgian style wheat bier with a hint of the fruity esters found in a German Hefeweizen.
Ingredients:
Belgian pilsner malt, wheat and oats
New Zealand organic Hallertauer and Saaz hops
Freshly-ground coriander and Curacao (bitter orange peel)
Production Targets:
Original Gravity: 11.5 Brix
IBUs: 10.5
Alcohol By Volume: 5.0%

Refrigerated 12 oz. aluminum can poured into a glass. Cloudy deep golden with big white head. Aroma is coriander, medium body, well carbonated, and some lacing. Taste is coriander and wheat esters.

Can at home dipping into supplies bought for cookout tomorrow. Pale watery yellow looking. Nose is light spice and yeast. Tastes yeasty, orange, banana, cloves and coriander. Watery palate. Easy lift here.

Shaker pint at Jake’s American Bar at Royal Pacific Resort in Orlando, Florida. The pour is a mostly clear yellow golden with a small white head. The aroma is wheat grain, floral, citrus and some bubblegum yeast. The taste is the citrus floral along with a bit of the bubblegum wit yeast of the nose. The palate is light bodied with active carbonation and a dry citrus yeast finish. Hit the spot.

Draft - Sweet wheat and light lemon. Pale yellow with a thin white head. Light sweet lemon, like cool aide. Much too sweet for me. Draft at brewery - Banana and clove. Still quite a bit of lemon sweetness, but finishes much better.

A lightly hazed yellow wit with a thin white head. In aroma, classy banana esters with light cloves and light chalkyness. In mouth, a decent wit with some bananas, berries, light chalk, not bad. Light bodied wit for the summer. On tap at Cigar City, May 22 2010.

On tap at Cigar City pouring up hazy gold with white head. The aroma has modest notes of graininess, apple like fruity sweetness and a sense of yeasty spice. The mouthfeel is very thin allowing notes of grains, some malts, some sweet banana flavored wheat and soft mild spices to emerge from the liquid filled glass conveyance I’m holding.

draft. pours a clear watery color almost like lemon juice, fizzy white head. aroma, lots of sweet esters, mild yeasty/wheat nose, bubblegum with hints of orange peel and spices; coriander? flavors, similar to aroma, very sweet palate, had impression of some orange blossom floral notes mixed with the bubblegum mouthfeel. Some lime and spices add to the very mild touch of bitterness in the finish. This is light, easy to drink, refreshing, good summer beer. Enjoyed this one.
