Saison du Blé is the harmony of a fluffy Wheat Saison and a traditional, rustic Saison with Brettanomyces and Lactobacillus. The wheat balances a very dry body with a creamy, billowy mouthfeel, and our house Saison yeast adds complexity and acidity. This farmhouse ale was aged in Chardonnay barrels for several months. Lightly hazy golden body is topped by a moderate amount of white head that slowly recedes to cover. Smacked in the nose with chardonnay....perhaps smacked isn’t the right word, as I like chardonnay, and this is a fine example of it; not too buttery/oaky and with good acidity and juicy fruit notes. The flavor is a mouthful of chardonnay as well, albeit on a soft, tightly carbonated and lean body. Some lactic notes break through....almost no saison character....really grasping at straws to find much other than chardonnay here. Seems like the base beer must be nice, but there’s just no getting past the wine character here.
