Balaton is our Wild Missouri Brown Ale that was fermented in and aged in local Chambourcin Barrels with Missouri microflora for over a year with Michigan Balaton Cherries. We wanted Balaton to be soft, yet complex, so it is only 5% abv with a higher level of Brett influence and more impactful oak presence to balance out the signature Side Project acidity and the tart, cinnamon notes of the cherries. 375mL bottle drunk 12/31/18.
Good clarity, leaving sediment behind. Deep chestnut-to-auburn with light mahogany. Dark buttery-beige head fizzles quickly to nothing.
Nose shows strong wood tannin, mineral, strong acetic and lactic acid with good Brett fruitiness. Overall it's a mix of aggressive and enjoyable (though I don't mind the aggressive, really). Doesn't remind of vinegar or balsamic, thankfully. Seemingly very well-attenuated with hints of tart cherry, raisin, other dried red fruits and strong cereal/biscuit underneath. No alcohol or flaw.
In the mouth it's highly acidic/sour initially, though the palate does accustom itself quickly. Cherries are brilliant and nicely attenuated/integrated with other red fruits, hints of dark bread, cereal and tons of lactic and acetic acid. The Brett is there and maybe not quite as strong/prominent as I'd like, but it helps take some of the focus off of all of this strong acetic character. Dry, biscuity-to-malty texture with fine carbonation and lingering oak and light mineral/grape character. Very complex indeed and nicely done, though it wouldn't hurt to tone down the sourness just a bit here.

Tap into a wineglass showing hazy turbid caramel brown with no head. The nose shows tart notes of brown sugar and light notes of baking spices. The palate is full bodied and lightly carbonated. Highly tart with light flavors of vanilla. Drinks like a weaker version of Rodenbach Vintage Ale.

Bottle pour at RB Best. It pours brown with a khaki head. The aroma is a little toasted with some hints of walnut and tart cherries. The flavor has a hint of vinegar to go with some cherries and toast. This one was a little one note for me.

Bottle courtesy of Carl. Murky fairly ugly brownish red pour with a frothy beige head. Musty fruity nose with dark bread, musty sweet cherries, plums, lemon, soil, leather, apples & hints of barnyard. tiny sweet, sour, tiny malty, fruity, doughy & tiny buttery taste. Soft, round, slightly dry & tart mouthfeel. Nice smell but taste is too young with dough & butter. Bottle at the Side Project Cellar. Pours mostly clear, reddish brown with a frothy, light tan head. Dense tart cherry in the aroma, with hints of wood, cinnamon, faint toffee; it smells beautiful. Light sweet flavour with rich, true and lightly chewy tangy cherries, some wholegrain bread, impressions of cocoa perhaps, grape. Light to medium bodied with spritzy, massaging carbonation. Tart and refreshing, with further meaty cherry notes, moderate tartness, faint earth and wood, currants. Wow, superlative. The depth and balance of the cherry character is phenomenal.

375ml bottle at De garde anniversary party. pours out a hazy redish brown topped with a small head. nose is nice sweet cherries funk oak barrel notes and a little spice. Taste is more of the nice cherries a tart pucker note along with the oak.

375mL capped bottle shared by Dice. Dark red color. Juice dark cherry juice aroma. Unfortunately the flavor loses all that juiciness and us replaced with sourness. Dry end. Want more juicy dark cherry.
