Draught at Trillium Garden, 8/31/18.
Moderately hazy, bright marigold-to-brass yellow body topped by a medium amount of white head that shows moderate retention.
Nose is quite lactic but also shows a tart botanical-like character with light vegetal and pepper notes. Lemon, yogurt and mineral-like funk emanate from the bacteria with light wood but no toasted character from the barrel, nor any strong liquor/booze. Biscuity, nutty malts allow a touch of honey-like sweetness to balance and piquant acidity lingers long. No alcohol or flaw noted.
In the mouth it's tart and lightly astringent with lemon, yogurt, juniper and other floral notes. Malts/wheat arrive quickly to soften the texture and mostly balance the acidity, lending biscuit and very light honey. High attenuation, with strong, mostly engaging carbonation and no alcohol or flaw. Pretty straightforward stuff, lots of citrus and yogurt with floral and other gin-like notes adding to the acidity/tartness but themselves not really adding much to the strong lactic presence. A deeper, more supple texture or more biscuity/nutty wheat-like character may have helped to soak up/balance some of this acidity.

Bottle - Green Apple and gin aromatics. Cloudy gold with a small white head. Soft soured grains, barrel and nice gin aromatics. Nice and well balanced.

Poured from a 750 ml bottle. Aroma is a balanced blend of SARA funk and gin notes. Some light grain notes and hints of oak. Light citrus notes. Moderate gin character with some floral and herbal notes and a light dill pickle note. Pours hazy, dull, golden hay color with a large thick, creamy, white head that recedes to the edges where it lingers. Light lacing and small legs. Flavor is nice with some light citrus notes and a bit of acidity. Light sweetness and grain notes. Low bitterness and faint oak notes. Light herbal and floral gin notes. A bit of a cucumber note, but less than in the aroma. Nice lingering herbal notes with a bit of a pine and gin note. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a really nice beer. The gin is subtle and well balanced. Gin is a great character that integrates nicely with the SARA funk.

Bottle. Pours lightly hazy orange, medium off-white head, good lacing. Aroma is botanical indeed, herbal gin, lemon, brett, oak. Flavor is light plus tart and light funky, a nice herbal overlay on the standard SARA tart saison. Plays well and is quite enjoyable. Medium light body, soft mouthfeel. Rerate, 2021. This is one of my favorite sara saisons. The gin plays perfectly.
