St-Ambroise Russian Imperial Stout is Quebec’s tribute to the late 1700’s English Imperial Stouts, brewed for the Russian courts of Catherine the Great.
Made from a blend of barley malts, St-Ambroise Russian Imperial Stout is infused with Cascade, Goldings and Willamette hops, resulting in an outstanding hop-character with a smooth finish. Bourbon wood-aged, this full-bodied ale has a rich, smoky aroma with hints of vanilla, expresso and chocolate.
Serve St-Ambroise Russian Imperial Stout between 13°C and 15°C, preferably in a port glass or a brandy snifter. This stout will improve with age for a number of years. Store in a cool, dark place.

Nice brown creamy mediumlasting head. Aroma is slightly rich and sweet, dark malts, coffee, salty licorice, alcohol, grass, dark sugar, spices. Taste is kind of sour-ish harsh, sour coffee, oak, dark malts, old hops, minerals, harsh grass, grassy chili, cardboard. Longlasting bitterness, dry harsh mouthfeel. Fair enough, but not really my cup of tea.

0.341l bottle from 2010 shared with The Tasting Crew. Looks really good this. Deep and dark near black looking this and it has a really nice deep dark chocolate head. Lots and lot of roastiness here. Super dark 88 percent chocolate is detected, some vanilla, some dark berries. It's quite nice. Lots of dry spicy Christmas flavors here! Imagine the darkest chocolate bar you've had. This tastes quite a bit like this. The Christmas spices reminds me of cinnamom and nutmeg. It has this slightly acidity as well. Could it be coffee acidity? The main thing I'm left with is a really good dark chocolate bar that I've eaten a bit to fast. Lots and lots of flavor. Yeah, what more to say it's a really fine one. 21.05.2014

Look: pitch black with a big mocha-orange head.
Aroma: clearly (but not overwhelmingly) bourbon barrel - vanilla and whisky, roasted, some alcohol, sweetness, dark fruit.
Taste: start light sweet with some acid-roast, then goes a big wave of bitterness with phenolic/alcohilc overtones. Quite a bit of alcohol when it starts, which slowly evaporates by the time you finish the glass.

Bottle (Vintage 2013) from my Secret Santa, many thanks Robin. Almost black colored beer with thick beige head. Aroma of roasted malt, cocoa powder, dark chocolate. Taste, chocolate, roasted malt, vanilla, very light licorice, wood. Very smooth not sweet, tasty imperial stout.

Bottle from the LCBO (2013 vintage). Pours a deep brown with a one finger deep khaki head. Nose is coffee and vanilla with dark fruits and a grassy background. Start is sweet toffee and vanilla which leads to a nice level of coffee and chocolate bitterness that produces a relatively dry finish. Bourbon comes out as it warms. Creamy full body with soft carbonation.

(2011 bottle, ~2 years old) Pours pitch black with a small quite dark brown active head that faded quickly away but left lots of lace. A big, rich aroma: dark bittersweet chocolate, roast coffee/malt, smoky/burnt wood, vanilla, a little bourbon, soy sauce, something creamy/coconut-like, definite malt sweetness underneath all those layers. Flavour initially black coffee, roasted barley, chocolate, vanilla sweet malt. Then the bourbon and wood components build up though the whiskey is never overpowering. Smoky and burnt from the mid-palate on, a bit of anise/hop character. Quite dry for most of the latter half of a sip, with a fairly substantial roast barley/hop//smoke bitterness to the finish. Palate is full but smooth with the alcohol pretty well-hidden, carb not heavy but slightly prickly. This is a really good RIS - it’s got lots of layers of aroma and flavour to discover, the wood-ageing is kept well in check and it’s neither a sugar or roast bomb and the dry/bitter nature is compelling. Wish I had more 2011 left than I do, and I should go get another 2013!

[Thanks to Glouglouburp]. Bottle. Black colour with a tan head with short duration and medium lacing. Aroma has notes of coffee beans, black chocolate, coconut, light vanilla with roasted malts and bourbon notes. Flavor has notes of roasted and burnt malts, black chocolate and coffee, strong bourbon notes that remains in the mounth for a long time; slightly sweet at the beginning with a moderate bitterness in the final ad aftertaste, some licorice and vanilla hints. The final is strongly alcoholic joined with coffee and bourbon notes and dry sensation.

Bottle - 2011 Vintage - Bourbon, chocolate, licorice, molasses and a complexity that could have me describing this for a while. Jet black with a huge creamy brown head. Sweet vanilla bourbon, chocolate, coffee, licorice and roasted malts. A wonderful rich mouth feel to go along with the robust flavor. It is sad that this beer doesn’t have a bigger distribution as I think it is a gem for Canada that doesn’t have enough recognition.
