This is not your average IPA. From the incredible nose, to the amazing finish, this IPA is one that both session drinkers and beer nerds alike will love. We’re full on board the hopwagon with this big American-style IPA. However, it is not designed to blow your head off with overpowering hop bitterness. Instead, Mosaic IPA is an extremely well-balanced brew that showcases its unique hop aroma and flavor. This beer gets its name from a new hop variety named “Mosaic,” which is predominantly where the immense, raw hop aroma and flavor is derived. Mosaic IPA has a noticeable malt backbone to help soften the high level of hop bitterness and flavor, while keeping the body fairly light. The word "Mosaic" is also representative of the diverse range of individuals that make up our community. It's perfect in every way!

Pretty good for an old school hoppy amber

Can (7/17/25) shared by Steve. Hazy, honey brown, light sparkle, decent head with good retention and light lacing. Aroma is strong caramel, piney/grapefruit-y hops. Taste is strong caramel, grapefruit/pine/citrus. Smooth, frothy texture, average carbonation and finish as taste. This is almost more of a Black IPA, but I suspect this is due to age/decay of hops rather than intention of brewer. Appreciated the tick of the brewer. Jury is still out on whether this is well done but wrong style or just old and non-representative. Either way, weirdly OK but not great.

Nice mango and grapefruit mosaic. Pours golden with decent head. Quite a bitter finish here, and solid beer all around. Tap at Flying Saucer in Dallas Airport.

Poured from the tap. Clear amber with full white head. Caramel and biscuit malt, quite malty with mild pine hops. Decent, a little more old school, but not totally.

Dfw Saucer, 2/15/23. Lightly hazy deep amber-auburn. Large, expansive, beige-butter head, great retention. Spice, caramel, cookie, buttercream, juicy cherry and old fashioned. Clean, malty, not resinous. No booze. Cherry-orange hops as they combine w the medium malts. Soft and succulent, good attenuation. Great spiciness. Nothing like the oniony mosaic back east. Lovely.

On tap at Community Beer Co, pours a clear copper / bronze with a small white head. Aroma is fairly subdued, with earthy hops, some pine, and crisp biscuity malt. Flavour is forceful, with lots of piney hops, some resins, light sweetness, some dankness, and crisp biscuity malt. Dank, piney and assertive, with a relative dryness on the finish. Excellent.

Short pour at Community. Mostly clear amber, tons of sticky lace. Leafy bitter nose, bold resin, tea. Taste is super pithy & nearly sweet with grapefruit, lemon & pine. Good bit of a of acid in this too. Stiff & strong, but thin & crispy enough to make it. Very good.

Canned, 355 ml, in Austin. Almost clear orange with medium white head. Malty, caramel, quite hoppy, pine, citrus, sweet and quite bitter in finish. Medium bodied.
