The Heart of Darkness is our capstone mead, made from hand-harvested estate fruit grown by the Schramm’s. The cherries are of the Schaarbeek variety, an intensely flavorful, European Morello type. The raspberries are Heritage and Latham, grown in Michigan by the Schramm family for three generations, and the black currants are Crandall and Consort. Production is extremely limited, as the amount of care and labor which go into each batch is substantial. This mead is the finest representation of our core commitments to fidelity and quality of ingredients. It pours a deep purple in color, has a dense fruitiness and a mid-palate with considerable tartness and a lingering, balanced finish. Your empty glass will be redolent of the honey component. The Heart of Darkness pairs well with spicy, grilled red meats, high quality dark chocolate, and blue cheeses.

Batch 11 bottle at the brewery, 11/29/24. Deep currant-black cherry. Clear. Bright, maybe not as sweet and intense on the honey side as expected with a surprising levity from bright fruit juice and acid. Lovely blend with cherry leading the way. Black pepper, vanilla and lingering medium amounts of honey intensity. No alcohol. Very focused, high clarity nose. Surprisingly not dense in the mouth, or at least not densely honeyed. The fruit is there in droves. But maybe a blend of fruits is a little less interesting to me than I realized, as I found myself being more captivated by the single varietal stuff. Of course this is still no slouch and I'm pleasantly surprised it's not a syrupy sugar bomb. Imagine being disappointed by this due only to the just unreal-high expectations and hype.

187 ml bottle. Pours a dark purple color. The aroma is strong with dark cherries and blueberries. The taste is intense cherries in the forefront giving way to raspberries and blueberries. Some sweetness--but not cloying. The palate is full and coats the mouth well. Finishes long and dry with lingering berries and some tannins. Overall: Decent fer sure-would drink the every day if it was more readily available. Paired well with some Marieke gouda.

Thanks Justin for sharing batch 8! Wineglass showing cabernet vinous red.

The nose shows intense black forest fruits forwardness without entering into jamminess.

The palate is medium bodied. Black forest fruit forward with an unreal intensity throughout.

inky purple color. Mildly tart with nice honey and raspberry. Cherries and a touch of blackberries but lacks the tartness I want. Fruit character is a bit all over the place. Intense fruit, very sweet, but not up to the hype. I mean this is insanely good but it’s not as good as pips and I slightly prefer the Saskatoon berries. Superb but not up to the hype

Feels like more berries than batch 9, huge jammy sweetness with some leathery age to balance it out nicely, decadent in complexity instead of the usual sweetness only decadence, like a fresh cut berry medley and chewy raw honey to bring it together.

Batch A. Bottle pour at Schramm's, pours a deep dark mahogany. Aroma brings out tart raspberries, jammy cherry, a hint of currant, and treacly honey. Flavour is intensely rich, with lots of tart cherries, some currant, some raspberries, and gently treacly honey. Boozy, tart, sweet finish. As good as other Schramm's products, but not worth of its heightened reputation or price tag. Delicious nonetheless.

No ta owocowosc robi wielkie wrazenie, calosc wcale nie jest rypiaca, wrecz przeciwnie, taka elegancka. W uscie gesto i wiecej porzeczek, kapinka cierpkosci, posmaki kwaskowate, alko nieistnieje. Faktucznie czad. Oczywiscie nie na 4.9 jak ma. Na szklanki

Bottle @ Boring Portland Share thanks to Jamie. Pours still dark red. Aromas of black currants, raspberries, cherries, tannins, honey. Taste is sweet, jammy, raspberries, light tart cherries, floral honey, some tart black currant-like notes.
