Monk's Brew aka Monk’s Elixir is a heavy dark Belgian ale inspired by the Trappist monasteries of Rochefort and Westvleteren. The beer style, characterized by its high content of alcohol, distinguishes itself by its dominant yeast character, delicious malt background and balanced hop notes.

Clear dark brown beer, fizzy beige head, unstable, bit adhesive, dissipates immediately. Lots of chunks floating around. Aroma: lots of raisins, caramel, bit bready, yeasty, soapy, some almonds. MF: ok carbon, medium body. Taste: sugary, dried fruits, caramel, lots of alcohol, more sugar, raisins. Aftertaste: sugary, alcohol, milk chocolate, little bitter, dried fruits, sweet, some caramel. Is this an attempt to make a Rochefort? Wouldn't be surprised if it was. (I wrote this in my notebook before reading the info on-line, so it is indeed a Rochefort clone ;-)

750 ml bottle into chalice; no bottle dating, but likely at least a few years old.. Pours hazy extremely dark brown, almost black color with a 1 finger dense khaki head with good retention, that reduces to a thin cap that lingers. Spotty soapy lacing clings on the glass; with some light streaming carbonation. Aromas of big raisin, prune, molasses, cocoa, toast, pepper, clove, toffee, roasted malt, dark bread, dark candi sugar, dark earthiness, and yeast spiciness. Very nice aromas with good balance and complexity of dark malt and spicy yeast esters. Taste of raisin, prune, date, cocoa, molasses, toast, toffee, dark bread, dark candi sugar, light clove, and dark earthiness. Lingering notes of dark fruit, cocoa, molasses, toast, toffee, dark bread, dark candi sugar, light clove, and dark earthiness on the finish for a while. Very nice balance and complexity of robust dark malt flavors with fruity/spicy yeast esters; and zero cloying flavors present after the finish. Medium carbonation and fairly full bodied; with a very creamy and slick mouthfeel that is nice. Alcohol is very well hidden with only a small warming noticed after the finish; but still definitely a slow sipper. Overall this is an excellent Quadrupel style. Great balance, complexity, and robustness of dark malt and fruity yeast ester flavors; and very smooth to sip on slowly. A very enjoyable offering; this ages very nicely.

Really awesome quad. Aroma of prune and raisins. Good lacing, creamy texture. Dark brown colour. Some sugarcane sweetness at finish. Awesome feel, great balance. Bottle at volos Mikkeller tasting.

dark brown ccolour, thin beige head; aroma of yeast, caramel and a hint of alcohol; taste of roasted sugar, significant alcohol and and bitter aftertaste; well ballanced quadruppel, though the alcohol is a bit too intensive

33 cl. bottle poured in to a trappist glass. Dark brown colour with a lighter tint. Small, off-white head with some floaties. Rich, sweet and complex aroma with brown sugar, syrup, chocolate, coconut, marzipan, and a fruity, yeasty note. A hint of alcohol. Taste is sweet. Full body, creamy to oily texture, soft carbonation. Long lasting, sweet finish with a discrete dotting from the alcohol. Excellent.

Bottle. 2006 vintage enjoyed in 2013. Hazy brown liquid with small to medium light tan head. Aroma of port, dark fruit, licorice, chocolate, bread, grapes, light bubblegum and toffee. Taste is light sweet and light bitter with notes of licorice, port, dark fruit and roasted malt. Medium bodied with medium carbonation. Nice, the roasted malt works well.

Bottle @ ZZT VI thx to myself. Dark brown with a ruby redness shining through. Smells bordaux, wood, malts, alcohol. Tastes roasty, dark chocolate, heavy malts, wood. Full body, soft carbo.

0.33l bottle. Reddish dark brown body, off-white head. Aroma of sour cherries and some candi sugar. More like a fruit lambic than a quad based on the nose. Tastes like sour cherries, strawberries and some candi sugar. Not bad, but cannot be compared to the Belgian quads.

Aroma has spices, some anise, coriander and raisins. Flavour is somewhat spicy with coriander, anise, ripe fruits, raisins, caramel and sweetish malt. Nice, like a mixture of Rochefort and Jacobite Ale.

Aroma is malty with raisins and plums. Also some spices and dark fruits. Flavour has dark fruits, anise, some malt, spices and plums. Also some unpleasant herbal tones. After some sips the anise starts to rule here. Still good.

There was a special type of alcohol I had to order from chemists to properly clean my 8-track mini-studio in the mid-90s. This beer smells like that, plus almonds. It’s very interesting to me as a homebrewer that only pale malts are used to make this dark beer (darker than some supposed ’imperial stouts’ I’ve have), so all the colour is coming from dark sugars. This is the kind of beer I give to wine drinkers to say - "Look! Beer really is more interesting and complex than wine. Shut your face!" And then in the morning, I regret my forthrightness, with the emphasis on the ’rightness’.
