Our first mixed fermentation ale.
Brewed in August 2018, this beer has spent ten months in red wine barrels with different mixed cultures bringing acidity and Brettanomyces complexity to the beer. It was then primed with elderflower syrup, made on site from locally foraged elderflowers. Blend 1 is tart, funky and quenching with flavours of lemon rind, hay and elderflower.

Bottle, by way of a trade with LazyPyro. Cheers Chris. Hazed, pale straw gold. Decent fine white head. Nose has elderflower cordial. Soft, spicy grain. Some woody herb. Light, milky, cheesy funk. Taste has some fruity sweetness, and is a little dry, and a little tart. Light body. Could have a bit more body. Spritzy, fine carbonation. Fruity and lightly tart on the finish. Very refreshing.

Keg at IMBC '19, session 2, 04/10/19. Hazed golden orange with a decent off white cap. Nose is base funk, grass, apricot, ripe citric flesh, oak. Taste comprises apricot, guava, spice, papaya, ripe citric soak, mellow barrel, bretted twang, barnyard esters. Medium bodied, fine carbonation, semi drying close with a balanced acidic ripple. Solid sour.

Draught, half pint. @«Mash beer fest», Barcelona (Spain), 25/10/2019. Rating nº3.000th. It was worth all the way. Slightly hazy yellow colour with a low white head. Aroma is funk, wood and apricot. Taste is funky and apricot. Next one please!

Keg at the indy man beer con. 2019. A hazed golden yellow straw coloured pour with a halo of white head. Aroma is vibrant lemon verbetiet, zippy floral lime, kaffir. Zesty. Light sakt. Flavour is crisp light tart, pithy, citrus, lactose, funk, horsey, light brett. Palate is pithy, highish carbonation. Pithy good.

Keg at the Taproom. Hazy golden, thin white head. Aroma of elderflower cordial, funk, musty, vinous. Taste is sweet elderflower cordial, mildly funky grape, slightly vinous (red wine isn't as intense as expected), woody, light citrus/lemon, sour, acidity level is ideal for me, not too strong and didn't burn the throat. Medium body. Not usually a fan of much mixed ferm stuff but this is great, especially for their first release, it's so different from their other beers. Looking forward to their future releases.
