Complex, with notes of vanilla and oak, Baby Jimmy is what results when our wild fermented, bone dry Dry Cidah is aged in Jim Beam bourbon barrels. The first cider we ever produced, and still a favorite!

A pale golden yellow cider with nice effervescence. In aroma, weird sweet butterscotch with light barrel notes, woody notes, OK. In mouth, sweet fruity apple with light chalky character, light mineral notes, light woody notes, a bit tired. Bottle is about 3years old.

Sample at the taproom. Slightly cloudy yellow color with a thin white head that dissipates quickly to an outer ring. Sparse strings of lace. Aroma of apples, oak and spice. Medium body with flavors of apple, vinous oak and spice. The finish is fruity and oaky with an apple aftertaste. Decent overall.

Bottle at home. Fine hazy blonde cider. Nose is tart Apple some wood and white wine. Tastes of tart green apple, touch of sugary apple juice, oak, some vanilla, white wine. Tart and sweet. Not really any bourbon to speak of.

On tap at Meridian Pint’s DC Beer Week Cider Event. Pours a clear, bright, lime green. Looks like albarino wine, zero head. Nose of apples, some sour mash, lime, a touch of booze, white grape. Flavor is great, apples, white grape, saw dust, lime. Lightly sweet finish.

Location: Draft at Cornerstone (Ogunquit, not College Park, sorry Kramer!), 7/11/13

Aroma: The nose is what you'd expect, apple, some booze, and oak
Appearance: It pours a mostly clear golden color with a small white head
Flavor: The taste is apple and oak, it is semi-tart and not particularly sweet in this style
Palate: The body is fairly light and it has a lively carbonation
Overall Impression: I thought this was an interesting one. The oaking worked nicely, but stays fairly subtle. It isn't very sweet for the style. It is pretty unique.

Bottle: Poured a light yellow color cider with strong carbonation. Aroma consists of fresh medium sweet apple with some light oak notes. Taste is also dominated by medium sweet apple juice notes with light oak notes and bourbon notes are even more subtle. Interesting and makes me want to try other cider form those guys.

Bottle at Paul’s. Pours straw yellow. Nose/taste of fresh apple, white sugar and oak. Some booze in the finish. Thin body seems a bit watered down.
