Pours a light golden color with a medium fizzy white head. Thin and stringy lacing. The aroma is spicy with some citrus and pine. Light-bodied and spicy with lots of citrus but not much else. The finish is peppery and lightly hopped and crisp. I could have sworn the ABV was higher because I was feeling it more after this bottle than with most beers in the 10% range. Maybe it was the hot day. All in all this is a decent Saison. I liked the different spices, although a little more malt would have made it more enjoyable.

Cleary, bright golden in color with a thin white ring of lace - not much going on in the aroma besides hops and a hint of lemon rind - the flavor is not very refined - Avery is great at big beers, but I suspected they wouldn’t fare well with something as subtle as a saison, and I was right - this comes across more like a medium-bodied pale ale with a touch of lavender and white pepper than a true saison - where there should be intricate subtlety there is mostly weak flavor that buckles quickly, leaving a watery finish - nice try, guys, but stick with the big stuff.

2005 bomber consumed 5/27/2005. Well it’s unfiltered, phew, whaddya know. That right there is enough to make me happy. The color is a bright marigold and honey orange-yellow, mildly hazy, with a white head that is fairly fluffy, medium to large-sized and not long retained. Not tons of lace either. . .but I like the color of the beer. Moving on we have a big shot of herbs/flowers in the nose, probably the chamomille and lavender that really stick out in my mind. Lots of dry citrus notes, predominantly lemon. For all of the herbsal-floral smell, it didnt remind me at all of Cuvee des Fleurs. I don’t get any real complex yeast or funky farmy malt/hops in the nose. Flavor begins with a peppery bitterness and what I thought was coriander, but then, there is no coriander in this, so I am clearly an idiot. I can’t really describe grains of paradise, but they are there on the finish, I dont think they taste anything like black pepper, or white pepper for that matter. Sort of chewy spicy nuttiness, if that makes any sense (no, it dosent). Soft, perfumey hops, light yeast and dry citrus, mainly lemon again. Malt adds backbone/body, but I don’t get the notion that this was supposed to showcase a hugely complex malt. Malted wheat adds that typical light chewiness/eveness with some moderate sourness/acids. I think it will mellow and meld better in a year, as the spices jump at you too much and seem to dominate, and I still wish there was more yeast complexity. Soft, unfiltered mouthfeel, yet not loose on the tongue or watery. Did not detect any alcohol.
Gave the bottle another try in June 2006. ACK! This lavender-lime-ginger-coriander liquid bears little resemblance to a saison and has just become bogged down in spices. The attenuation level, furthermore, is rather poor. Guess I was wrong with my prediction. Yikes, couldnt finish more than a few sips.
