The simplicity of Trillium’s grist of barley and wheat delivers a wonderfully complex yet still approachable beer. The house blend of farmhouse yeasts and Columbus and US Goldings hops drive a distinctive character in this rustic, unfiltered ale. A beautiful nose of spice and pepper, coupled with flavors of fermentation-derived fruit and more pepper. Firm bitterness, nicely carbonated with a dry finish, but there’s also a wonderful smoothness in the mouthfeel from the wheat.

Bottle. Pours hazy yellow, medium white head, dissipates fairly quickly, some lacing. Aroma is hay, grassy, pepper, a touch of lemon. Flavor follows, dry and quite light bitter, lots of cut field and black pepper, with a backing of lemon. Lightish body. Solid saison.

Bottle. Pours yellow gold white head. Nose/taste of lemongrass, sourdough, light peppercorn, grassy citrus and saison yeast. Medium body.

Draft at Trillium Brewing poured into a mini-snifter as part of their tasting. Pours a hazy pale yellow with fluffy off-white head. Aromas of citrus, funk, lemon peel. Tasting notes of citrus, lemon peel, funk. Medium body with a dry finish. Medium carbonation, crisp mouthfeel. Solid.

Draught at Lord Hobo, 2/23/14 (among other places that I’ve had it over the last year or so).
Lightly hazy golden-orange body has a small white head atop it that shows moderate to moderately low retention.
Sweet vanilla and creamy malts in the nose are joined by light banana and pineapple esters with a touch of clove and some leafy, green hops that add fresh herbs and a touch of citrus. Medium strength of aroma. Clean, rather simplistic but enjoyable aroma.
A touch sweeter than I’d like in the flavor, though this has the same Trillium "loose, somewhat undercarbonated" feel to it that I get out of their other Belgian style beers. I understand not wanting a stiff, heavily carbonated, fizzy beer, but it seems like it could still use more in many of their kegs as this looseness on the palate isnt helping its cause either. Somewhat malt-accentuated, with sweet cream and pale sugars. Fruity esters moreso than any real dry phenols. No alcohol. Light, pleasant hoppiness to it.

Growler from the brewery. Pours faintly hazy yellow with a moderate, pure white froth. Refreshing aroma, lots of dry hay, dry lemon rind, mellow yeast and pale malt. Good flavor, plenty more dried lemon rind, straw, dried pale malts, faint crunchy grains. Light to medium bodied with fine carbonation. Clean and tasty to finish, some more dynamic citrus character, dry lemon, light melon and tangerine, more dry straw, crunchy pale malts. Solid, classically-styled saison.

Pours bright hazy lemon yellow into a Sam glass. Bright white head with good retention recedes to coat surface. Lemon and yeast aromas. Soft with sweet citrusy lemon and yeast upfront turning to bitter earthy pith finish.
