Our signature New England Wild Saison, Stonington, was made with 100% Valley Malt grains and aged in oak barrels for more than a year. The fermentation is carried out by our native New England mixed culture, collected from grape skins at Saltwater Farm vineyard in Stonington, CT where JC & Esther Tetreault were married. Bright aromas of white wine and hay lead to barrel-derived flavors of nutty coconut and oak. Slight funk, nuanced acidity, and dry finish make Stonington approachable, yet complex.

Bottle split at the L6 Tasting, thanks to Leighton, 20/11/19. Lightly hazed orange with a moderate off white covering. Nose is tarte fruit shreds, lemon rind, wood must, stoned fruits, vinous tones. Taste comprises stoned fruits, fucked over apricot jam, base funk, dry rot, apple core, tarte citric shreds, wood must. Medium bodied, fine carbonation, semi drying close with a balanced level of acidity. Decent well balanced sour for a touch of age (5 years) on it.

Bottle shared at the Columbus tasting 20/11/2019. Many thanks. A hazed bright orange coloured pour with a fine white head. Aroma is white wine, vinous, tart lemon, sour fruit, wheat. Flavour is composed of pithy lemon, vinous funk, lemon rind, pineapple, light oak tart pineapple. Palate is sour, woody funk, white wine. Palate is semi sweet, pithy, moderate carbonation, Good,

Bottle shared in London - picked up at the Boston brewery ages ago. Vintage 2014. Pours mostly clear orange-gold with a thin, bubbly white head. Pretty darn good, actually, much better than anticipated. Has some lightly jammy citrus fruits, which are also a little tangy, has some good funk, relaxed acidity. Medium bodied with fine, massaging carbonation. Balanced finish, more pleasantly tangy citrus, soft yeast, pale bread. Really nice.

20th November 2019 Level 6 tasting. Thanks to Leighton for this one. Light haze on this orange gold beer, not much of a head. Palate is light and semi dry, decent fine carbonation. Nice woody vibe here. Tart orange and lemon citrus. A sharpish winey tang. Light finish. Nice enough, probably not gonna drink loads of this but fine.

Bottle thanks to Phil. Pours a clear orange gold with small off white head that diminishes to nothing. The aroma is funk, oak, lemon zest. Thin mouth, strong sour lemon, light acidity, oak, good.

Draught at Publick House for Trillium’s 2nd Anniversary on 3/23/15
Hazy peach-copper body is topped by a sparse off-white head.
Plentiful fruity esters in the nose jump out, with ripe peaches and pieces of orange rind leading the way. A blend of light acetic notes and touches of brett give way to an oakiness that is perhaps a touch heavy-handed.
A bit more collected than the previous lot of Trillium’s Belgian offerings have been. Better carbonation and less looseness, with a delicious wood character prominently displayed from start to finish. An acetic punchiness creeps in as well as a light suggestion of diacetyl (or is it just butteriness from the barrel?). Nonetheless, the sourness (or more closely, a strong tartness) is well-controlled and quite enjoyable on the finish. Alcohol is noteable but not too problematic. These beers aren’t easy to make and Trillium is making great progress with them.

Pours clear gold into a snifter. Bright white head with little retention recedes to mottle surface. Lemon funk aromas. Dry with sour lemon and apple upfront turning to oak before the lasting white wine finish.
