Pure Biss, Smuttynose’s third chef collaboration (and first Smuttlabs release) debuts this weekend (7-8 Dec. 2013) at Sonny’s Tavern in Dover.

This unconventional witbier gets its swerve from the contributions of Chef Jamie Bissonnette. Instead of the traditional coriander and orange peel, Jamie brought kaffir lime leaves, spruce tips and 25 pounds of grapefruit zest to the brewday. The rest of the ingredients are appropriate to the style.

Chef Bissonnette has been widely recognized for his cuisine at Coppa, Toro and Eastern Standard in Boston, as well as winning "Chopped" on the Food Network. He has just opened a second Toro in New York, with business partner Ken Oringer.

Malts: North American 2-Row, Wheat, Flaked Wheat, Flaked Oats
Hops: Bittering-Magnum, Flavor-Sterling
Yeast: White Labs WLP-400 Belgian Wit

Batch Size: 30 barrels, packaged in 5.2 gallon kegs and crown finished, 375ml bottles.

Bottle in NYC - picked up in MA. Pours clear yellow-gold with a tight, creamy white head. Huge aroma of zesty kaffir lime, lemon peel, grass, perfume. Light to medium sweet flavour with some honey drizzled over doughy wheat bread, some crackers, more zesty citrus, lemon rind, oily lime, a little grass. Light bodied with average, massaging carbonation. Finishes with further dominant kaffir lime, bread crust, wheat flakes, ripe lemon, hints of honey. Interesting stuff, but really not that drinkable.

Bottle. Pours clear orange white head. Nose/taste of wheat malt, coriander, lemon, lime, grapefruit zest, orange zest and light banana. Lighter medium body.

Pours clear gold into a tulip. Bright white head with little retention recedes to a soapy mess. Sweet dough, hay and citrus aromas. Smooth with sweet lime, bread and grapefruit upfront turning flat in the lasting bitter spruce finish.

Bottle from the brewery. Pours a pretty damn clear light golden color with a smallish white head that dissipates almost instantly. The aroma certainly has a lime bite to it. Light pepper and coriander, and a hint of pine sap, with a sweet almost honey like malt and bitter pith round out the aroma. The flavor is light honey like malts with a huge spruce presence that almost feels like its smoked countered with a bitter pithy grapefruit flavor. Medium body with a moderate level of carbonation and a slick sweet mouthfeel. I was really getting into the keffir up front, but the spruce and grapefruit flavor contrasted just a bit to much for me.

Bottle purchased at Craft Beer Cellar, Portsmouth. Hazy golden ale with a small, fizzy, white head. The aroma is a nice blend of fruitiness and Belgian yeast. Orange peel, apples and pears. Hints of lemon. Some straw. Good yeast body. I like that the brewer doesn’t use much spice. Light to medium-bodied with fizzy carbonation. Easy to drink and worth a try if you like Wit’s.

Draft at Beer Run. Pours a nearly clear pale yellow color with a medium sized frothy head. Aroma of banana, wheat, green banana, mild spice. The taste is toasted wheat, banana, candied banana, spice, herbal hops. Medium bodied.
