750 ml bottle into chalice, best before 8/17/2018. Pours fairly crystal clear golden amber/light orange color with a 1 finger fairly dense and fluffy white head with great retention, that reduces to a small cap that lasts. Nice dense soapy lacing clings down the glass, with a moderate amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big lemon, orange, peach, apricot, apple, pear, melon, plum, golden raisin, peppercorn, coriander, light banana/clove, honey, candi sugar, biscuit, herbal, floral, grass, and yeast earthiness. Damn nice aromas with great complexity and balance of fruity/spicy yeast, bready malt, and light earthy hop notes; with great strength. Taste of big lemon, orange, peach, apricot, apple, pear, melon, plum, golden raisin, peppercorn, coriander, light banana/clove, honey, candi sugar, biscuit, herbal, floral, grass, and yeast earthiness. Moderate yeast spiciness and light herbal bitterness on the finish; with lingering notes of lemon, orange, peach, apricot, apple, pear, melon, plum, golden raisin, peppercorn, coriander, honey, candi sugar, biscuit, herbal, floral, grass, and yeast earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of fruity/spicy yeast, bready malt, and light earthy hop flavors; with a great malt/spiciness balance, and zero cloying flavors after the finish. Moderate dryness from carbonation and yeast spiciness. Medium-high carbonation and medium body; with a very smooth, crisp, moderately creamy/grainy, and lightly sticky balanced mouthfeel that is awesome. Zero warming alcohol as expected of 7%. Overall this is an outstanding Tripel! All around awesome complexity, robustness, and balance of fruity/spicy yeast, bready malt, and light earthy hop flavors; very smooth, crisp, and quite refreshing to drink. Very bright and complex on yeast, with great malt balance. Very well carbonated, but not prickly or foamy on mouthfeel. A highly enjoyable offering.

[Thank you for sharing!][330 ml. bottle sampled @ O.B.E.R. Kerstbierfestival 2016] Clear amber, tanned head. Nose is sweet sugar, chemical, sugar, syrup, some vegetables. Thin, fizzy, sparkling, chemical, sugar, low vegetable, fain t dark fruit, hollow, thin & fizzy. Poor, expected much more here, bad bottle maybe?

La question qui me taraudait en débouchant cette Val Dieu de Noël, bière d’abbaye, était de savoir si nos chers moines nous avaient, pour cette période toute particulière, concocté une recette à la hauteur de l’évènement. D’emblée je reste néanmoins dubitatif des 7 % Abv, bien faiblard. En verre, la composition est plutôt bonne, un blond foncé couplé à une forte effervescence procurant une abondante mousse blanche de plusieurs centimètres (mais s’affaissant cependant par la suite). Le nez frais, se porte sur les céréales, le miel et une pointe de moût de raisin. L’attaque est pleine de promesse, sur une belle alliance entre les céréales, les épices et des arômes d’orange. La deuxième bouche permet de laisser s’exprimer l’amertume relevée par l’alcool qui arrive tout de même à pointer le bout de son nez. L’arrière bouche permet quant à elle de donner une belle envergure à l’ensemble avec des arômes d’orange et d’épices. Mais alors que la dégustation est des plus agréables et que l’on attend un final brillant permettant une envolée gustative....patatras....quelle déception...l’ensemble s’effondre dans un magma difforme, lourd en bouche et beaucoup trop mielleux. Nul doute que le titrage alcoolique trop faible n’y est pas étranger. Dommage, car cette Val Dieu de Noël avait de beaux atouts pour en faire une excellente bière. Je mets tout de même une mention spéciale pour l’étiquette très joliment travaillée.

F: huge, white, long lasting. C: dark amber, very hazy, opaque. A: malt, orange peels, coriander, spicy, tangerine, peach, yeast. T: malty, very yeasty, fruity, light spicy, caramel, medium body, medium to high carbonation, for me there is lack of some balancing bitterness, not bad but not very enjoyed, 0,33l bottle from Carrefour market - Saint-Michel @ Etterbeek, Brussels.

07/12/2016 - draught @ Moeder Lambic Fontainas. Hazy dark yellow with big white creamy head. Nose is sweet malty, yeast. Taste is sweet malts, lots of banana, some peach, some yeast.

Brilliant white frothy head stayed well on highly carbonated, hazy copper coloured body. Over stewed fruit, sugar, orange & spices aroma. Medium bodied, prickly & very effervescent on the palate. Cloying on the aft. Taste is much as the aroma with spiced orange, Belgian yeast fruity finish of bitter/sweet citrus.

Ambar nebuosa, espuma blanca consistente. Adoma escaso, levadura. En boca gaseosa, miel, acaramelada y levadura belga que aporta predominio ligeramente ácido y lácteo. Poco especial, belgian blonde del montón con un poco más de alcohol.

Tap at Chez Moeder Lambic Fontainas, Brussels. Poured a hazy medium amber with a frothy white head and lots of broken lace. The aroma is toffee caramel, sweet malts yeast, some alcohol. The flavour is moderate to strong sweet with a smooth sweet malt, rich sweet fruit palate. Medium bodied with soft carbonation and a sweet lingering finish that lasts forever!
